Cheerful Cherry Red Velvet Cake

Baking Instructions

  1. Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.
  2. Combine cake mix, water, oil and eggs in large bowl.
  3. Beat with an electric mixer on medium speed for 2 minutes. Pour into prepared pans.
  4. Bake 26 minutes or until toothpick inserted in center comes out clean.
  5. Cool cakes on wire rack 15 minutes. Remove cakes from pans and cool completely.
  6. Spread frosting on flat side of one cake layer, top with next cake layer and frost entire cake. Garnish with cherry pie filling & topping.

Bite-Size Football Brownies

For football parties, bite-size portion-controlled indulgences appeal to everyone. Bake any DH mix in a pan size such that they turn out 1-inch thick, such as 17.6 oz mix in 9X9 pan. Use 3" X 1" football-shaped cookie cutter to cut brownies into footballs (can be made by bending circular cutter). Pipe white frosting into laces pattern on the football brownies. Serve and watch 'em fly off the plate.

I love DH cake mixes, but to make them taste even better and more moist I found a little trick: add one more egg than directions call for and a slight bit more of both water and oil. I doesn't mess with the recipe nor does it change baking time...but it does taste even more homemade than DH's usually are.
