Triple Pumpkin Mini Tarts

Using a pie-crust recipe from Chef Joe at the Duncan Hines kitchen, these mini tarts are perfect for a fall get together!

Ingredients

  • 1 box Pumpkin Spice Decadent Cupcake Mix
  • 5 eggs
  • 1/4 cup flour, approximately, for flouring surface and/or adding to crust mixture
  • 1 can (15 oz.) pumpkin puree
  • 3/4 cups brown sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. ginger
  • 1/4 tsp. ground cloves
  • 1 can evaporated milk
  • 1 stick plus 1 tbsp. butter, softened
  • 2 Tbsp water

Baking Instructions

  1. Separate eggs-- 3 egg yolks and 1 whole egg into large bowl, 2 egg whites and 1 whole egg into another bowl to set aside, discarding the additional white (or saving it for another recipe or project).
  2. Mix the 3 yolks and whole egg with the cupcake mix from the Duncan Hines Decadent Pumpkin Spice Cupcake Mix, along with 1 Tbsp butter. Add additional flour 1/2 tablespoon at a time if the dough seems to be too sticky.
  3. Knead dough fully, then roll out on a floured surface. Use a 5-inch cookie or biscuit cutter to cut the crust into rounds.
  4. Place rounds in greased mini muffin tins gently. Preheat oven to 350 at this stage.
  5. Prepare pie filling by beating the 2 egg whites and 1 whole egg reserved from earlier. In a separate bowl, mix brown sugar and spices. Add pureed pumpkin and sugar-spice mixture to the beaten eggs. Gradually stir in evaporated milk.
  6. Place 1 Tablespoon of pie filling into each crust in the mini muffin tin.
  7. Bake at 350 for 10-11 minutes. Remove from oven and let cool.
  8. While the tarts are cooling, prepare pumpkin spice frosting mix according to package directions on the Duncan Hines Decadent Pumpkin Spice Cupcake Mix, using the stick of butter and water.
  9. Using the provided pastry bag and a Wilton 1M tip or other tip of your choice (or no tip at all), pipe frosting onto each tart, then serve.
