Nothing's better than snuggling up with a warm Pumpkin Spice Latte… cookie!

Ingredients

  • 1 package Duncan Hines® Signature Spice Cake Mix
  • 2 large eggs
  • ½ cup of vegetable oil
  • ⅛ cup of hot water
  • 2 tsps. instant coffee
  • ⅔ cup pumpkin puree

Baking Instructions

  1. Preheat oven to 350 °F and grease baking sheets.
  2. Mix the cake mix, eggs, oil, pumpkin puree.
  3. Mix coffee and water together and then add to the batter.
  4. Spoon batter onto prepared baking sheets. Lightly pat down the top of each cookie ball.
  5. Bake at 350°F for 10 minutes. Let cool for 2 minutes.

Extra Pie Crust

Extra Pie Crust

If you have any extra pie crust left over, roll it out and spread some cinnamon and sugar over the top. Roll up and cut into 1/2-1 inch slices and bake them while you are baking your pie. Check them regularly so they don't get too brown. Once they are a light golden brown remove from oven and cool. Nice change on a snack idea.

Measure your cake with a ruler before attempting to split it into two equal layers. Once you measure, you can mark the middle with toothpicks as a guide for slicing. Be sure to use a serrated knife for a clean cut.
