Eggnog Rum Cake

Exie Washington Recipe shared by:
| Follow this Baker

It's a cake that is substituted with eggnog and rum instead of the usual water or milk ingredients.

  • Hands-On Time: 5 Minutes
  • Total Time: 50 Minutes
  • Servings: 10 to 16 slices
  • Rating:

  • 1 box Duncan Hines Yellow cake mix
  • 1 cup of eggnog
  • 1/4 cup of dark or spiced rum
  • Duncan Hines Vanilla frosting

Baking Instructions

  1. Follow the cake mix directions and eliminate the water. Instead, mix in a cup of eggnog and a 1/4 cup of dark or spiced rum.
  2. Then let it bake for the amount of time listed on the box of the Duncan Hines cake mix.
  3. After the cake has cool, mix some rum and eggnog to your liking into Duncan Hines Vanilla Frosting.
  4. If it's too thin, you might have to make homemade frosting from powdered sugar.
  5. You will have a non-fat cake when leaving out the oil.

Add a few drops of green food coloring to the frosting and pipe in onto the cupcakes. Decorate wood coffee stirrers to make the witch's legs. Cut the witch's shoes out of black paper and tape to the ends of each coffee stirrer.

Very moist cakes

Very moist cakes

Try baking your cakes at 25 degrees less than called for in the recipes. Cake gets done in about the same amount of time but stays very moist and less chance of a rounded top.
