A thick fudgy layer of brownies with sweet heat from red chilies and chocolate -- all balanced with a rich, citrus cream cheese frosting.

  • Hands-On Time: 15 Minutes
  • Total Time:
  • Servings: 16 brownies
  • Difficulty: Pretty Easy
  • Rating:

Ingredients

  • Brownies:
  • 1 box Chewy Fudge Brownie Mix
  • 1 tsp. chili powder
  • ¾ tsp. ground red pepper
  • 1 tsp. orange juice concentrate
  • 1 tsp. grated orange rind
  • ¼ cup water
  • 2 large eggs
  • ½ cup vegetable oil
  • Frosting:
  • 4 oz. cream cheese, softened (½ of 8 oz. package)
  • 4 tbsp. (½ stick) butter or margarine, softened
  • 1 tbsp. orange juice concentrate
  • 1½ cups confectioners’ sugar

Baking Instructions

  1. Preheat oven following directions on box for type of pan used. Grease 8"x 8" baking pan; set aside.
  2. Blend together brownie mix, chili powder and red pepper. Add concentrate and rind to water; prepare brownie mix as described on box using eggs, water and oil. Spread evenly into prepared pan.
  3. Bake in center of oven 42 - 45 minutes or until a toothpick inserted in center comes out almost clean. Place on wire rack; cool completely.
  4. Make frosting by placing cream cheese, butter and concentrate in medium bowl. Beat with electric mixer on medium-high 2 minutes or until creamy and smooth. Gradually add confectioners’ sugar, beating until creamy and smooth. Frost cooled brownies.
  5. Garnish with additional grated orange rind or zest and cayenne pepper, if desired. Store covered in refrigerator.
  6. Tips:
  7. Simplification - Beat 1 tbsp. orange juice concentrate into cream cheese frosting. Use in place of above recipe.
  8. For extra fun, pipe a red chili pepper on each serving using store-bought decorating icing in a tube.

Tips

baking time

baking time

I like to seperate the yokes from the whites, mix the egg yokes, water and oil with the mix first; and then whip the egg whites with 1 tsp cream of tartar and fold into cake mixture. This reduces the baking time for bundt cakes and changes the texture of layer cakes.

I am new here and I am searching the Internet far and wide and cannot seem to find a cake pop recipe using cake mix and a cake pop maker (my daughter has a new babycakes cake pop maker). Where can I go? Do you have a recipe? Tips? Thank you!
