Popsicle Brownie Bites

From picnics to birthday parties to baby showers, these Popsicle Brownie Bites add some fun and color to any occasion.

Baking Instructions

  1. Preheat oven to 350ºF. Grease and flour 8 x 8 -inch pan.
  2. Prepare and bake brownie mix according to package directions for fudge-like brownies using water, oil and eggs.
  3. Cool completely in pan on wire rack.
  4. Blend frosting with desired food color(s).
  5. Cut brownies into 6 to 8 equal bars. Carefully insert popsicle sticks into short end of brownies.
  6. Spread frosting over sides and top of cooled brownies and top with sprinkles. Chill on baking sheet 30 minutes or until frosting sets.

Easy cake removal

I cut a sheet of wax paper to fit my baking pans and pour the batter on that. It makes removing the cakes from the pans easier and seems to keep them from over cooking in the oven and getting burnt on the bottoms.
