Amaretto Brownie Ice Cream Sandwiches

Turn our Amaretto Brownie Mix into a delicious cookies and make ice cream sandwiches.

Ingredients

  • 1 package Duncan Hines® Decadent Amaretto Brownie Mix
  • ½ cup vegetable oil
  • 1 Tbsp. water
  • 2 large eggs
  • 1 cup butterscotch chips
  • 1 half gallon vanilla ice cream

Baking Instructions

  • Preheat oven to 350°F. Grease baking sheets.
  • Combine ice cream and Amaretto topping in a large bowl and place in the freezer for 30 minutes.
  • Combine brownie mix, oil, water and eggs in large bowl with wooden spoon until blended. Stir in chips.
  • Drop by heaping tablespoons 2-inches apart on prepared pans.
  • Bake 10 to12 minutes or until just set in centers. Cool cookies 1 minute on pan. Cool completely on wire rack.
  • Sandwich a scoop of Amaretto ice cream between 2 cookies.
  • Baking Tip: For best results, bake one baking sheet at a time. If baking two sheets together, rotate pans halfway through baking.

For a simple dulce de leche, submerge an unopened can of sweetened condensed milk in boiling water, simmer for 3 hours (less, if you want it a thinner consistency) and cool.
