Fruit 'n' Juice Squares

This is cool and fruity good for summer.

Ingredients Baking Instructions
  • 1 1/2 cups boiling water
  • 1 pkg. (8-serving size) or 2 pkgs (4-serving size each) Jell-O strawberry or cranberry gelatin
  • 1 cup cold orange juice
  • Ice cubes
  • 1 tub (8 ounces) Cool Whip, thawed
  • 1 can (8 3/4 ounces) fruit cocktail, drained
  1. Stir boiling water into gelatin in large bowl at least 2 minutes, until completely dissolved.
  2. Mix cold juice and ice cubes to make 1 1/4 cups. Add to gelatin, stirring until slightly thickened (consistency of unbeaten egg whites).
  3. Remove any remaining ice. Refrigerate 45 min.
  4. Reserve 1 cup gelatin; set aside. Stir 1/2 of whipped topping into remaining until smooth.
  5. Pour mixture into an 8-inch square pan.
  6. Refrigerate about 5 minutes, until set but not firm (should stick to finger when touched and should mound).
  7. Stir fruit into reserved gelatin and carefully spoon over creamy layer in pan.
  8. Refrigerate 3 hours, or until firm.
  9. Cut into squares and garnish with remaining whipped topping.

It's perfect for a summer party. I prepeared it for some friends who were visiting us from Texas and it was a big hit.
