Pecan pie.
- 1 crust Flaky Pastry for pie
- 2/3 cup sugar
- 1/3 cup butter, melted
- 1 cup corn syrup
- 1/2 tsp. salt
- 3 eggs
- 1 cup pecan halves or broken pecans
- Heat your oven to 375 degrees F. In a medium bowl beat all remaining ingredients except pecans with a wire whisk until well blended. Stir in pecans. Pour into pie crust.
- Cover edges of pastry with 2 to 3-inch strips of foil to prevent burning.
- Remove the foil for last 15 minutes of baking. Bake 45 to 50 minutes, or really till center is set.
- Cool completely on a wire rack, about 2 hours.
- Served in my household with a scoop of vanilla ice cream, so good!
