Rocky Mountain Pie

Recipe Description
It's like all of the ingredients of a chocolate chip cookie, except the chocolate, butter, and sugar melt together at the bottom while the eggs and flour form a crust at the top.

Ingredients Baking Instructions
  • 2 eggs
  • 1 stick of butter
  • 1 cup of sugar
  • 1/3 cup of flour
  • 1 cup chopped walnuts
  • 1 tsp. vanilla
  • 2 tbsp. bourbon
  • 1 cup chocolate chips
  1. Preheat oven to 375°.
  2. Cream butter and sugar.
  3. Add eggs and mix well.
  4. Add flour and mix well.
  5. Stir in remaining wet ingredients.
  6. Stir in remaining dry ingredients.
  7. Pour into unbaked pie crust and bake at 375° for 40 minutes, or until golden crust has formed on top.
  8. It's just as easy to make two of these pies at once, as chocolate chips usually come in bags of 2 cups each. When I do this, instead of measuring the bourbon, I use a whole miniature / airline bottle of bourbon per two pies. The alcohol evaporates during the baking process, but the chocolate will taste much richer.
