- 6 sweet potatoes, cooked
- 1 cup butter
- 1/2 cup sugar
- 1 1/2 cups light brown sugar
- 3 eggs, separated
- 1 cup evaporated milk
- 1 1/4 tsp. vanilla
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. nutmeg
- 1/8 tsp. cloves
- 1/8 tsp. allspice
- 1 1/2 tsp. baking powder
- 1 9-inch pie crust, unbaked
- 1/3 cup sugar for topping
- 1/3 cup light brown sugar for topping
- 3 tbsp. evaporated milk for topping
- 1/2 cup pecans, chopped
- Mash cooked sweet potatoes and add both sugars. Beat egg yolks and add to sweet potatoes, along with evaporated milk, vanilla, salt, and other spices. Let cool.
- Stir in baking powder. Beat egg whites and fold in.
- Pour mixture into an unbaked pie crust. Bake at 450 degrees for 15 minutes . Reduce heat to 350 degrees and bake additional 45 minutes.
- Let cool while preparing pecan topping.
- Combine both sugars and evaporated milk in a small bowl. Mix well. Stir in pecans. Spread topping over pie.
- Heat oven to broil and place oven rack so the top of the pie will be about 5 inches from heat source.
- Cover edges of pie with foil. Broil about 1 minute or until topping bubbles and begins to brown.
- It can be served slightly warm or chilled. Keep leftovers refrigerated.
