Yummy dish.
- 1 large plantain, ripe (very black)
- 1/2 and 1/4 tsp. cinnamon, divided
- 1/8 cup applesauce
- 2 tbsp. light corn syrup
- 2 tbsp. maple syrup
- 1 tbsp. margarine
- 1 tbsp. unflavored creamer
- Mash the plantain, add applesauce, 1/2 tsp. cinnamon, and mash together.
- Grease a skillet, and turn stove to medium or medium high heat.
- Spoon small spoonfuls of plantain mixture into hot skillet, let cook and turn when brown.
- For sauce, heat the syrups and 1/4 tsp. cinnamon into small sauce pan and heat over medium heat, whisking until warm.
- Add margarine and creamer and whisk until smooth.
- Reduce heat to medium low and cook until sauce is reduce to half and thickened, then spoon over plantains.
- Serve with ice cream, or eat alone as breakfast or as a dessert.
