Fried Plantains with Caramel Sauce

Ingredients Baking Instructions
  • 1 large plantain, ripe (very black)
  • 1/2 and 1/4 tsp. cinnamon, divided
  • 1/8 cup applesauce
  • 2 tbsp. light corn syrup
  • 2 tbsp. maple syrup
  • 1 tbsp. margarine
  • 1 tbsp. unflavored creamer
  1. Mash the plantain, add applesauce, 1/2 tsp. cinnamon, and mash together.
  2. Grease a skillet, and turn stove to medium or medium high heat.
  3. Spoon small spoonfuls of plantain mixture into hot skillet, let cook and turn when brown.
  4. For sauce, heat the syrups and 1/4 tsp. cinnamon into small sauce pan and heat over medium heat, whisking until warm.
  5. Add margarine and creamer and whisk until smooth.
  6. Reduce heat to medium low and cook until sauce is reduce to half and thickened, then spoon over plantains.
  7. Serve with ice cream, or eat alone as breakfast or as a dessert.
