I saw a recipe similar to this on TV, and I had a great idea to make this. I've made it many times, and it never fails! It's one of the greatest inventions.
- 16 vanilla wafer cookies
- 2 (8-ounce) packages cream cheese, softened
- 3/4 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees F (175 degrees C). Line muffin pans with cupcake papers.
- Place one wafer cookie in the bottom of each cupcake paper.
- In a medium bowl, cream together cream cheese and sugar. Beat in eggs and vanilla until smooth.
- Pour over wafers in cupcake papers.
- Bake in preheated oven for 15 minutes, or until golden and set.
- This is excellent!

My Mom has made these for years. She puts pie filling on top of the cheesecakes. Any flavor tastes great!!!!!!!

Has anyone had a problem with the tops caving in? And it took longer than 15 minutes!

You may need to refrigerate over 2 hours if it too soft or runny.

These are excellent, and I don't even like cheesecake! The flavor is unbelievable!
