made this to see of i wanted to make it for thanksgiving. It turned out great. I did use a 10 in. springform. If your looking more for a cheese cake this is not it, small dollops of cheese cake in a carrot cake is what you get. we did not hesitate to eat this at all. use guessed it, i'm not making this again cause i wanted to try another recipe.

I was very worried about this cake after reading the reviews, but it was fabulous! I am at 6500 feet, so I added 1/4 cup flour to the cake batter, but otherwise made it as directed. I used a 9" springform pan and covered the cake in fondant instead of the frosting suggestion. A couple hints. The cake batter is supposed to be very stiff. Make sure your carrot/raisin mixture and pineapple are squeezed of any excess mositure, which completely contradicts the instructions on the box for a regular cake. Also, I normally use a lot of store brand ingredients in my cooking, but I didn't want to chance runny cream cheese. I used Philadelphia Brand. I thiink what is more important is to make sure you don't use cream cheese "spread" or whipped. I would even be a little cautious of light. People LOVED this cake and I plan on making it a staple for my fondant covered cakes. It really was a nice combo.

those of you who have a problem with it not baking" all the way thru, what size spring pan did you use? it calls for a 9" - 9 1/2 spring pan. while reading your comments I looked at my spring pan and it's a 8" pan the cake would not completely cook in this pan.

follow to a "T" but again I had the same non baking issue. As we speak its sitting in the oven on 200 and is firming up. Looked up a recipe that is the same for the cheescake except that it calls for 1 Tbsp of flour which makes sense. Sooo hope that helps. I cant rate as i have not tasted it.

Can I use a regular pan instead of a springform
Comment by: whymss (4 discussions) on Mar 7, 2011 at 05:34 PM
no because when you try to invert it will be upside down on the creamcheese

For the frosting, it says "2 T pineapple juice." I'm sorry, I don't know what this means! What's T??? Not tablespoons or teaspoons...
Comment by: laciann75 (2 discussions) on Nov 24, 2010 at 09:44 AM
A capital T means Tablespoon, lower case t means teaspoon.

Freezes very well. I always cut the leftovers and put them into individual bags and freeze. When we want a piece we just take one out and thaw.

I tried the carrot cake cheesecake last Thanksgiving, but the cheesecake part was not done. It was very wet and raw like. I thought I followed all the directions, so I didn't know what happened when I sliced into it to serve my guests. The carrot cake part was perfectly cooked. Any ideas of what happened?
Comment by: skalck (1 discussion) on Sep 25, 2010 at 10:19 AM
I hope someone does reply. I had a failure on this also. Followed the recipe exactly, but cake mixture seemed very thick and heavy and it was hard to spread the second lay on top of the first cheesecake layer. Also, I baked this the full time and had to put it back in for almost half the time again and still the very center of this was raw.
Comment by: Toots0819 (no discussions) on Dec 23, 2010 at 01:34 PM
I thought the cake mix was too thick also. So, I put in three eggs instead of two. The recipe on the box calls for three for the regular cake. Then I put two instead of three in the cheesecake recipe. My cake turned out. I did have to bake it a little longer than it said.
Comment by: dlicking (no discussions) on Mar 4, 2011 at 05:23 AM
For skalck, the directions say to "spoon" the second layer of cake mix onto the filling. You can see by the picture that it was not spread out flat. Also, I think I will try Toots0819's tips for adjusting the recipe.
Comment by: cindy1177 (1 discussion) on May 4, 2011 at 01:02 PM
check the size of your spring pan. it calls for a 9"-91/2" spring pan. I just checked mine and it's a 8" spring pan. that would make the cake not cook completely.

This is really a good cake. I have had the carrot cake, alone with cream cheese frosting and didn't care for it. I had two boxes (bogo), so when I saw this recipe I thought I'd give it a try and it is really good. I added a some crushed pineapples to the frosting adn to the batter and it was out of sight.
Note: In the box there is an envelope with dehydrated carrots and raisins, so you'll need hot water for that. You don't add any other carrots. A few reviews have been asking about how many carrots, so I hope this will clear that up.

I made just the Carrot cake recipe just the other day and as i was reading the instructions again i noticed i didn't follow them correctly the first time!! With this recipe you must read the instructions CAREFULLY!! for the Chessecake one and the cake alone. Everyone loved them both, i will make it again.

I do a lot of baking and decorating of cakes, so I do know my way around a recipe. This one just did not come together for me as I expected. It didn't layer, as the picture shows. There seemed to be a lot of cake, and very little "cheesecake". Everyone I baked it for said they loved it, and took home leftovers, but I was really not impressed.

Food snobs were stumped when they tasted this cake and yes they ate it with the crow on the side. A friends' brother died and I asked if there was anything I could do...she asked that I make 'that cake of yours'. I live in the deep south and they take there desserts very seriously. I take my cheesecake very seriously WIN~WIN.

I can tell by how this looks it will be fabulous. I would like to suggest that the same thing can be done with the Red Velvet mix (rather than going to the Cheesecake Factory for their red velvet cheesecake). I make my Red Velvet with 1 cup of sour cream, 1/2 cup water, & 1/4 cup vegetable oil, and 1 tsp. of vanilla extract rather than the liquid ingredients and their measurements that are on the box. Oh, so that no one is confused I do still add the 3 eggs that are listed on the box. I also prefer a more chocolate-y red velvet so I add 2 tbls. of unsweetened cocoa to the dry cake mix before mixing.

If you look at making the cake itself on the box of carrot cake it says " # Prep: OPEN carrot and raisin pouch. ADD carrot and raisin pouch to 1 1/4 cups of HOT tap water; let stand about 5 minutes." The carrots and the raisins are in the box for the mix. Great recipe!

I just tried the carrot cake cheesecake at an afternoon event . It was yummy and really satisfied my afternoon craving for dessert. It should be noted that i have as yet not tasted or made the regular ,decadent, carrot cake . As for the carrot cheesecake: it was moist, and not too sweet (which is a big deal on my list ). The walnuts were welcome, as they helped to cut any notion of cakey-ness. Lastly, had I not been told that it was a Duncan HInes cake, I would have thought it was made from scratch.
I also cannot help but to wonder if the carrot cake on it's own, without the element
of the cheesecake would have been even tastier, as sometimes the combination of two distinct recipes can often weaken each other. So, that's something I need to try next.
Now, if I only had a double espresso.

Oh. My. Goodness. I made this cake for my wife and in-laws last Saturday while they were out sightseeing, and I wasn't at all sure I could pull it off -- but guess what -- I rocked it. This is hands-down the best cake I've ever made, and I'm quite sure it's better than anything I could have bought from the store (for significantly less dinero). It's rich; it's creamy; it's everything I hoped it would be. Everyone had two slices (well... I had three). I'm pretty sure my in-laws will be back for more! On second thought... what have I done???

I made this yesterday.....what a disaster! I followed the recipe exactly and my oven tested out just fine for temp. I finally had to take it out so the top wouldn't burn, and the center was still raw. The part that was cooked was pretty tasty so I might try it again in a larger springform pan. Mine was a 9" but I would recommend at least an inch larger. And this was a pretty expensive mistake between the cost of the mix and all the extra ingredients.
