This is really a good cake. I have had the carrot cake, alone with cream cheese frosting and didn't care for it. I had two boxes (bogo), so when I saw this recipe I thought I'd give it a try and it is really good. I added a some crushed pineapples to the frosting adn to the batter and it was out of sight.

Note: In the box there is an envelope with dehydrated carrots and raisins, so you'll need hot water for that. You don't add any other carrots. A few reviews have been asking about how many carrots, so I hope this will clear that up.

I would love to make this recipe; but there is no quantities shown on the carrots & the raisins. Does anyone know the correct amounts?

Actually the carrots and the raisins are in the cake mix itself.

I made this for my boss and his family gathering of relatives from out of town. The family loved it, so did he. I made just the Carrot cake recipe just the other day and as i was reading the instructions again i noticed i didn't follow them correctly the first time!! With this recipe you must read the instructions CAREFULLY!! for the Chessecake one and the cake alone. Everyone loved them both, i will make it again.

No where in the recipe is there a listing for the quantity for carrots and raisins. Is this on the box? Would love to make this, but hesitate to do so unless I know all the ingredients.

I do a lot of baking and decorating of cakes, so I do know my way around a recipe. This one just did not come together for me as I expected. It didn't layer, as the picture shows. There seemed to be a lot of cake, and very little "cheesecake". Everyone I baked it for said they loved it, and took home leftovers, but I was really not impressed.

Food snobs were stumped when they tasted this cake and yes they ate it with the crow on the side. A friends' brother died and I asked if there was anything I could do...she asked that I make 'that cake of yours'. I live in the deep south and they take there desserts very seriously. I take my cheesecake very seriously WIN~WIN.

loved it!!!! I didn't use the pineapple, instead I used 1 cup of pumpkin puree added to the cake mix... taste was better after chilling over night (-:

Sweetsqueen: If you follow the cdirections step by step, they are not overwhelming. Everthing is explained very well. I'm sure the finished product will be worth it.

I can tell by how this looks it will be fabulous. I would like to suggest that the same thing can be done with the Red Velvet mix (rather than going to the Cheesecake Factory for their red velvet cheesecake). I make my Red Velvet with 1 cup of sour cream, 1/2 cup water, & 1/4 cup vegetable oil, and 1 tsp. of vanilla extract rather than the liquid ingredients and their measurements that are on the box. Oh, so that no one is confused I do still add the 3 eggs that are listed on the box. I also prefer a more chocolate-y red velvet so I add 2 tbls. of unsweetened cocoa to the dry cake mix before mixing.

I would really like to have the full recipe for the Red Velvet Cheesecake recipe. My family doesn't really like healthy words in the titles of dessert. LOL "carrots" is just a little to healthy for them

The directions for the cake look very overwhelming and difficult. Is it just because of the number of steps involved in making it?

If you look at making the cake itself on the box of carrot cake it says " # Prep: OPEN carrot and raisin pouch. ADD carrot and raisin pouch to 1 1/4 cups of HOT tap water; let stand about 5 minutes." The carrots and the raisins are in the box for the mix. Great recipe!

I just tried the carrot cake cheesecake at an afternoon event . It was yummy and really satisfied my afternoon craving for dessert. It should be noted that i have as yet not tasted or made the regular ,decadent, carrot cake . As for the carrot cheesecake: it was moist, and not too sweet (which is a big deal on my list ). The walnuts were welcome, as they helped to cut any notion of cakey-ness. Lastly, had I not been told that it was a Duncan HInes cake, I would have thought it was made from scratch.
I also cannot help but to wonder if the carrot cake on it's own, without the element
of the cheesecake would have been even tastier, as sometimes the combination of two distinct recipes can often weaken each other. So, that's something I need to try next.
Now, if I only had a double espresso.

Any easy way to give cheesecake more flavor. I made this last night and it was super easy to follow the recipe. Making it at night turned out to be a great idea since it has to set in the fridge for a couple hours. Really yummy and seasonal!

Oh. My. Goodness. I made this cake for my wife and in-laws last Saturday while they were out sightseeing, and I wasn't at all sure I could pull it off -- but guess what -- I rocked it. This is hands-down the best cake I've ever made, and I'm quite sure it's better than anything I could have bought from the store (for significantly less dinero). It's rich; it's creamy; it's everything I hoped it would be. Everyone had two slices (well... I had three). I'm pretty sure my in-laws will be back for more! On second thought... what have I done???

I made this yesterday.....what a disaster! I followed the recipe exactly and my oven tested out just fine for temp. I finally had to take it out so the top wouldn't burn, and the center was still raw. The part that was cooked was pretty tasty so I might try it again in a larger springform pan. Mine was a 9" but I would recommend at least an inch larger. And this was a pretty expensive mistake between the cost of the mix and all the extra ingredients.

I loved this recipe although the straight carrot cake with cream cheese frosting trumps this any day. I love it!
