Butter Pecan Torte

This easy dessert is great on buffets or at work.

Ingredients Baking Instructions
  • 1 cup graham cracker crumbs
  • 1 cup soda cracker crumbs
  • 2 Tbl. sugar
  • ½ cup softened butter
  • 2 Lg. Instant Vanilla Pudding Mixes
  • 1-1/2 cups milk
  • 56 oz.. Butter Pecan Ice Cream, softened
  • 1 small light Cool Whip
  • 1/2 bag Heath toffee bits
  1. Preheat an oven to 350 degrees.
  2. Mix the two different crumbs, sugar and butter in a 13 x 9 x 2 pan and pat down as a crust
  3. Bake the crust for 10-12 min, or just until it starts to get light brown....cool completely.
  4. In a large bowl, mix the two boxes of pudding mix with the milk.
  5. It will be very thick and paste like. Mix in the softened ice cream.
  6. Pour the mixture over the cooled crust and freeze.
  7. Top with cool whip and Heath bits, cover and refreeze.
  8. When ready to serve, cut three squares by five squares for fifteen portions.
  9. Served like this will be ice cream like...I prefer this refrigerated instead of frozen.
  10. The pudding will keep the ice cream from melting all over and will serve as a mouse-like torte. Stays nice on a buffet for holidays...Can be made with any combo, choc. pudding and ice cream. etc.
