This easy dessert is great on buffets or at work.
- 1 cup graham cracker crumbs
- 1 cup soda cracker crumbs
- 2 Tbl. sugar
- ½ cup softened butter
- 2 Lg. Instant Vanilla Pudding Mixes
- 1-1/2 cups milk
- 56 oz.. Butter Pecan Ice Cream, softened
- 1 small light Cool Whip
- 1/2 bag Heath toffee bits
- Preheat an oven to 350 degrees.
- Mix the two different crumbs, sugar and butter in a 13 x 9 x 2 pan and pat down as a crust
- Bake the crust for 10-12 min, or just until it starts to get light brown....cool completely.
- In a large bowl, mix the two boxes of pudding mix with the milk.
- It will be very thick and paste like. Mix in the softened ice cream.
- Pour the mixture over the cooled crust and freeze.
- Top with cool whip and Heath bits, cover and refreeze.
- When ready to serve, cut three squares by five squares for fifteen portions.
- Served like this will be ice cream like...I prefer this refrigerated instead of frozen.
- The pudding will keep the ice cream from melting all over and will serve as a mouse-like torte. Stays nice on a buffet for holidays...Can be made with any combo, choc. pudding and ice cream. etc.
