Apple muffins with a cinnamon topping, great for a breakfast or dessert.
- 1 egg
- 1/2 tsp. cinnimon
- 3 tsp. baking soda
- 3/4 cup milk
- 2 cups flour
- 3/4 tsp. salt
- 1 apple, cored and finely chopped
- 1/3 cup brown sugar
- 1/2 cup veg. oil
- For the topping, you will need 1/4 cup brown sugar and 1/2 tsp. cinnamon
- Heat oven to 400 degrees.
- Place foil liners in muffin tin (have to use foil ones or the batter will stick).
- Stir apples in with milk, oil, eggs, baking soda, and salt.
- Combine liquid and dry ingredients, stir only until flour is moist (the batter will be lumpy).
- Fill tins 2/3 to 3/4 full.
- Sprinkle tops.
- Bake until golden brown, about 20 min.
- Be sure that you use foil cup cake holders and not paper, or the batter will stick when you are backing the muffins.

Sugary topping was great, but the muffin's were not sweet enough. They tasted more like biscuits. The recipe needs more suger in the actual muffin mix.
