this is very good pumpkin bread. It is easy to make. I used apple s. instead of oil .
everyone still liked it. Next time i make it i think i will make the muffins .
It just wouldn't be the holidays without pumpkin bread! This recipe is my favorite because it is sweet and moist, with just enough spice and a delicious, crispy crust.
- 3 cups all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 3 cups granulated sugar
- 1 cup oil
- 2 eggs
- 1 (15-16 oz) can solid-pack pumpkin
- Heat oven to 350 degrees. Grease two 8 x 4-inch loaf pans.
- In a bowl, sift flour, salt, baking powder, baking soda, cinnamon, and nutmeg; set aside.
- In a large bowl, combine sugar and oil. Stir in eggs, mixing well.
- Stir in pumpkin. Add flour mixture, stirring just until all is evenly moistened.
- Pour batter evenly into pans and bake 45-60 minutes, or until toothpick inserted near center comes out clean.
- Loosen loaves from sides of pan with a knife. Cool in pan 10 minutes, then remove and cool completely on racks.
- -This recipe can also make 24 muffins -You could probably add ground cloves and/or ginger to this recipe for a pumpkin pie taste.
