Mrs. Claus's Old-Fashioned Pumpkin Bread

It just wouldn't be the holidays without pumpkin bread! This recipe is my favorite because it is sweet and moist, with just enough spice and a delicious, crispy crust.

Ingredients Baking Instructions
  • 3 cups all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 3 cups granulated sugar
  • 1 cup oil
  • 2 eggs
  • 1 (15-16 oz) can solid-pack pumpkin
  1. Heat oven to 350 degrees. Grease two 8 x 4-inch loaf pans.
  2. In a bowl, sift flour, salt, baking powder, baking soda, cinnamon, and nutmeg; set aside.
  3. In a large bowl, combine sugar and oil. Stir in eggs, mixing well.
  4. Stir in pumpkin. Add flour mixture, stirring just until all is evenly moistened.
  5. Pour batter evenly into pans and bake 45-60 minutes, or until toothpick inserted near center comes out clean.
  6. Loosen loaves from sides of pan with a knife. Cool in pan 10 minutes, then remove and cool completely on racks.
  7. -This recipe can also make 24 muffins -You could probably add ground cloves and/or ginger to this recipe for a pumpkin pie taste.

this is very good pumpkin bread. It is easy to make. I used apple s. instead of oil .
everyone still liked it. Next time i make it i think i will make the muffins .
