Blueberry Cheesecake Muffins

Blueberry muffins with a cheesecake center!

  • Hands-On Time: 15 Minutes

Ingredients

  • 8-oz. pkg. cream cheese, softened
  • 3 tablespoons sugar
  • 1 egg
  • 1 box Duncan Hines Wild Maine Blueberry Muffin mix
  • 1 cup milk

Baking Instructions

  1. Heat oven to 375 degrees.
  2. Line twelve muffin cups with paper liners; spray liners with nonstick cooking spray.
  3. In medium bowl, combine cream cheese and sugar; beat until smooth.
  4. Add egg; beat well.
  5. In medium bowl, combine muffin mix and milk; stir just until dry ingredients are moistened.
  6. Fill prepared muffin cups 2/3 full. Top each muffin with about 1 tablespoon cream cheese mixture.
  7. Bake for 20-25 mins, til cream cheese is set.
  8. Store in refrigerator.

Baking a level cake

Baking a level cake

When preparing cakepan to bake a cake, line inside bottom of pan with wax paper. Wrap OUTSIDE of pan with dampened terrycloth on sides only. Pour cake batter into pan onto wax paper and bake as usual. No need to grease inside of pan, cake will rise level. This works for all sizes of cakes. Terry

This is a question about the ingredient - Vanilla Pudding - in the Pineapple Upside down cake...Do I make the pudding as directed on the pudding box and then add to cake mix OR just add dry pudding mix to cake mix?? Thank you.
