Blueberry Cheesecake Muffins

Blueberry muffins with a cheesecake center!

  • Hands-On Time: 15 Minutes
  • Total Time: 38 Minutes

Ingredients

  • 8-oz. pkg. cream cheese, softened
  • 3 tablespoons sugar
  • 1 egg
  • 1 box Duncan Hines Wild Maine Blueberry Muffin mix
  • 1 cup milk

Baking Instructions

  1. Heat oven to 375 degrees.
  2. Line twelve muffin cups with paper liners; spray liners with nonstick cooking spray.
  3. In medium bowl, combine cream cheese and sugar; beat until smooth.
  4. Add egg; beat well.
  5. In medium bowl, combine muffin mix and milk; stir just until dry ingredients are moistened.
  6. Fill prepared muffin cups 2/3 full. Top each muffin with about 1 tablespoon cream cheese mixture.
  7. Bake for 20-25 mins, til cream cheese is set.
  8. Store in refrigerator.

Non-fat Yogurt for Oil

I have used a bit of the oil while replacing the rest with non-fat yogurt in both brownies and cakes. It produces a different texture and taste than applesauce. Experimenting will tell you which proportions of each you prefer...I've used different combinations and haven't been dipleased with any of my results!

Baked this cake and it is scrumptious, added instant vanilla pudding mix to cake ingredients. added milk to pineapple juice to requal equired amount in recipe. Next time will also.add coconut and pecans to the cake batter. Can not wait to bake again. Susan 19
