Blueberry Cheesecake Muffins

Blueberry muffins with a cheesecake center!

  • Hands-On Time: 15 Minutes

Ingredients

  • 8-oz. pkg. cream cheese, softened
  • 3 tablespoons sugar
  • 1 egg
  • 1 box Duncan Hines Wild Maine Blueberry Muffin mix
  • 1 cup milk

Baking Instructions

  1. Heat oven to 375 degrees.
  2. Line twelve muffin cups with paper liners; spray liners with nonstick cooking spray.
  3. In medium bowl, combine cream cheese and sugar; beat until smooth.
  4. Add egg; beat well.
  5. In medium bowl, combine muffin mix and milk; stir just until dry ingredients are moistened.
  6. Fill prepared muffin cups 2/3 full. Top each muffin with about 1 tablespoon cream cheese mixture.
  7. Bake for 20-25 mins, til cream cheese is set.
  8. Store in refrigerator.

Cream whips to a greater volume if chilled. Chill mixing bowl and beaters to beat whipping cream until stiff.

Wonder how bakeries get those clean, neat, perfectly cut brownies and bar cookies? After your brownies have cooled, transfer the pan to the refrigerator for 1-2 hours. Remove and turn the entire pan of brownies out in one piece. (See my Brownie Pan Removal tip for this.) Use a long serrated bread knife and a ruler to cut your brownies into perfect squares and serve.
