Blueberry Cheesecake Muffins

Blueberry muffins with a cheesecake center!

  • Hands-On Time: 15 Minutes

Ingredients

  • 8-oz. pkg. cream cheese, softened
  • 3 tablespoons sugar
  • 1 egg
  • 1 box Duncan Hines Wild Maine Blueberry Muffin mix
  • 1 cup milk

Baking Instructions

  1. Heat oven to 375 degrees.
  2. Line twelve muffin cups with paper liners; spray liners with nonstick cooking spray.
  3. In medium bowl, combine cream cheese and sugar; beat until smooth.
  4. Add egg; beat well.
  5. In medium bowl, combine muffin mix and milk; stir just until dry ingredients are moistened.
  6. Fill prepared muffin cups 2/3 full. Top each muffin with about 1 tablespoon cream cheese mixture.
  7. Bake for 20-25 mins, til cream cheese is set.
  8. Store in refrigerator.

Flat Top Cake layers

Take an old dish towel and cut it into strips. Wet the strips and squeeze them out. Once you have poured your batter in the pan and patted the bottom to remove air bubbles take a wet towel strip and wrap it around the cake pan and tuck the end into the wrapped strip. (If they are not long enough attach them together with safety pins.) This will allow the cake to cook evenly and will give you more of a flat top to decorate.

Extra gluten is usually added to whole wheat or mixed wheat breads to help with rise and texture. Be sure to get vital gluten and not gluten flour...they are not the same thing!
