This is a super-moist banana bread with a kick! The sour cream adds such a nice, balancing flavor. My whole family loves this recipe.
- 1/2 cup butter (one stick)
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup mashed banana (approx. 2-3 medium very ripe bananas)
- 1/2 cup chopped walnuts (optional)
- 1/2 cup sour cream (I use a little more)
- Cream the butter with the sugar
- Add the eggs and the vanilla.
- Add the dry ingredients and mix.
- Add the mashed bananas, sour cream, and nuts.
- Bake in a greased loaf pan at 350 for one hour.
- Check center for doneness after one hour. May need more time.

I made 2 batches of this recipe, one for my office and one for my husbands employee, and it was a BIG HIT! The bread was so moist and yummy. This is my new banana bread recipe from now on.
