Orange Date Nut Bread

This makes very tasty bread.

Ingredients Baking Instructions
  • 8 oz. pitted dates, cut into small pieces
  • 1/2 cup chopped pecans
  • Zest of 1 orange
  • 2 tbsp. cake flour and 2 cups cake flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 stick unsalted margarine or butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 cup orange juice
  1. Preheat oven to 350 and grease and flour 8 1/2 x 4 1/2 x 2 5/8-inch loaf pan.
  2. In small bowl combine dates, nuts and orange zest. Toss in 2 tablespoons flour to coat.
  3. In another bowl, combine 2 cups flour, baking powder, baking soda and salt.
  4. In mixer cream margarine or butter till fluffy.
  5. Add the sugar and continue mixing.
  6. Add egg until incorporated.
  7. Working in 3 batches alternately add flour mixture and orange juice mixing well after each addition.
  8. Stir in nut date mixture
  9. Pour batter into loaf pan and bake for 1 hour to 1 hour and 10 minutes.
