This makes very tasty bread.
- 8 oz. pitted dates, cut into small pieces
- 1/2 cup chopped pecans
- Zest of 1 orange
- 2 tbsp. cake flour and 2 cups cake flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 stick unsalted margarine or butter, softened
- 1 cup sugar
- 1 egg
- 1 cup orange juice
- Preheat oven to 350 and grease and flour 8 1/2 x 4 1/2 x 2 5/8-inch loaf pan.
- In small bowl combine dates, nuts and orange zest. Toss in 2 tablespoons flour to coat.
- In another bowl, combine 2 cups flour, baking powder, baking soda and salt.
- In mixer cream margarine or butter till fluffy.
- Add the sugar and continue mixing.
- Add egg until incorporated.
- Working in 3 batches alternately add flour mixture and orange juice mixing well after each addition.
- Stir in nut date mixture
- Pour batter into loaf pan and bake for 1 hour to 1 hour and 10 minutes.
