Fat free oatmeal muffins.
- 1/3 cup of applesauce
- 1 cup skim milk
- 1/4 cup of egg substitute such as egg beaters
- 1/3 cup of packed brown sugar
- 1 tsp. vanilla
- 1 cup of whole wheat or white flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup rolled oats
- In a medium size bowl, mix the applesauce, egg substitute, milk, vanilla and brown sugar.
- In another bowl, sift the flour and baking soda, baking powder and salt. Stir this mixture into batter.
- Add oats and mix until combined.
- In a 12 cup muffin pan, spray each cup with non stick cooking spray or use paper liners. Fill each cup about 1/2 or 3/4 full.
- Bake at 400 degrees for 20 minutes or until done.
- Spread butter onto hot muffins.

I made these and added 1 cup fresh blueberries....Very good.

I used a little bit more applesauce (1/2cup) and they turned out really good.
