Recipe Description
Fat free oatmeal muffins.

Ingredients Baking Instructions
  • 1/3 cup of applesauce
  • 1 cup skim milk
  • 1/4 cup of egg substitute such as egg beaters
  • 1/3 cup of packed brown sugar
  • 1 tsp. vanilla
  • 1 cup of whole wheat or white flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup rolled oats
  1. In a medium size bowl, mix the applesauce, egg substitute, milk, vanilla and brown sugar.
  2. In another bowl, sift the flour and baking soda, baking powder and salt. Stir this mixture into batter.
  3. Add oats and mix until combined.
  4. In a 12 cup muffin pan, spray each cup with non stick cooking spray or use paper liners. Fill each cup about 1/2 or 3/4 full.
  5. Bake at 400 degrees for 20 minutes or until done.
  6. Spread butter onto hot muffins.
