I made these and didn't like them at all. I think part of the problem is that I used to many bananas, which I went by the recipe. The other problem is that I used a dark coated muffing pan, so I lowered the heat. They were terrible. I think I'll try a different recipe next time for banana muffins.

I made these as muffins with these changes: spice cake mix, no nuts, no frosting, & only 1 chopped banana (rather than 2) and it was great. The only thing is that the cooking time was too long for muffins. They should have been cooked for ~20mins rather than 25 because they were a little dry & over done.

Ooh, and they yielded 26muffins, not 18 which was awesome!

Tried making the two loaves. Need to figure out the correct baking time for the loaves. I was busy with other things, so I could not keep track of how many times I added five minutes to the baking time--probably about six.

I made this these one afternoon for a breakfast treat the next day. They were wonderful! Unbelievably moist! My family loved them! My 14-year old son ate them non stop. They were all gone well before bedtime. None were left for breakfast. My husband and kids ask for these all the time.

This does not tell you how many bananas to add to the mix.
