Lemon Cranberry Loaves

Be sure you use fresh cranberries and Duncan Hines Lemon Supreme Cake Mix to get the full impact of this delightfully tart Lemon Cranberry Loaf.

Ingredients Baking Instructions
  1. Preheat oven to 350 ºF. Grease and flour two 8 1/2 x 4 1/2-inch loaf pans.
  2. Stir together cranberries, walnuts and granulated sugar in large bowl; set aside.
  3. Combine cake mix, milk and cream cheese in large bowl. Beat at medium speed with electric mixer for 2 minutes. Add eggs, 1 at a time, beating for 2 minutes. Fold in cranberry mixture. Pour into prepared pans.
  4. Bake 45 to 50 minutes or until toothpick inserted in centers comes out clean. Cool in pans 15 minutes. Loosen loaves from pans. Invert onto cooling rack. Turn right side up. Cool completely. Dust with confectioners' sugar.

I'll bet this would be good with an Orange Cake Mix, too. Dunkin' Doughnuts has a great cranberry orange muffin, so I would like to try this.

I would rather use dried cranberries also. Would it work as well?

I always replace fresh with dried, the dry ones plump up from the heat and taste just as good.

Some time ago I contacted Ocean Spray aout using dried versus fresh cranberries. They indicated I should use 3/4 cup of dried cranberries to every 1 cup of fresh. The dried will eat up moisture in the cake.

I don't see why you couldn't used dried cranberries, but I would probably soak them in the milk or some vanilla before adding them.
