You can look up Splenda recipes on their website. And if you want to try something from a mix, Sweet & Low makes cake and frosting mixes. I used them to make cakes, cupcakes and trifles for a relative. I have also used store bought sugar free sponge cakes and dressed them up with fresh fruit and sugar free preserves. Anyone have any ideas/thoughts about it being served cold?? I wanna make this for a group party but I would need to make it ahead of time, therefore it would be cold by the time I got the the party...any help would be great!

For those looking for the exact Box as in the picture-- they might have changed it. But the 100% whole grain Streusel mix HAS Wild Maine Blueberries in it too. So it is the same thing. I added the streusel on top and in the middle to for an extra punch. It was delicious!

I made this with the Blueberry Streusel Mufin Mix and poured it into a loaf pan. I didnt have blueberry preserves, but blackberry instead which I used. The problem I found was when it says to "spread" the blueberry mixture. I found that impossible. So I swirled it in. And instead of a glaze, I used the streusel on top. It turned out fine. Very tasty.

I could not find the right mix so I bought the Blueberry Streusal Muffin Mix instead. It worked well I just did not use the Streusal. I also only had 'soy' milk in the house which also worked just fine. It was delicious!

I really wanted to make this but, was unsuccessful in my search for the muffin mix. I tried two different grocery stores and then gave up. : (

I cannot find it here either. The only mix I could find in whole grain was the was the 'Blueberry Streusal muffin mix. I am just going to have to try it with that one. Wish me luck. ;)

Does this whole grain muffin mix even exist ? I have looked in 10 stores and none ! The add in the magazine for this recipe even has a coupon for the streudel mix and the glaze ! ?????

I have found this at Walmart and Kroger. It's kind of hard to find amongst all the other mixes and the wild maine blueberries is in a small area on the box so.... good luck!

P.S. if you buy perserves with whole blueberries in them, it comes out great, (which is what I think the recipe means and is called for!)

The box of muffin mix comes with blueberries. In the recipe instructions, it tells you to mix the blueberries with the preserves.

My husband & I love this cake, I've made it several times for us as well as for others. It's a BIG hit where ever i take it. I do make my own glaze for the top. Powdered sugar, milk & butter.

I know it says coffee cake, but I served this as a dessert at a dinner party and my friends loved it. The sour cream is a great idea and makes it very moist.
