Blueberry Sour Cream Coffeecake

Recipe Description
The secret to this Blueberry Sour Cream Coffeecake is adding sour cream to the Duncan Hines 100% Whole Grain Wild Maine Blueberry Muffin Mix, and topping it with Duncan Hines Vanilla Amazing Glazes. It makes the coffee cake moist, lusciously delicious and lightly sweet. It'll melt in your mouth, even if you serve it without coffee.

Ingredients Baking Instructions

Coffeecake:

Glaze:

  1. Preheat oven to 375°F. Grease 8- or 9-inch round cake or pie pan.
  2. Rinse blueberries from mix with cold water and drain.
  3. For coffee cake combine muffin mix, sour cream, milk, and egg in medium bowl. Stir until servings are moistened. Spread half the batter in pan.
  4. Combine blueberries and preserves in small bowl. Spread half the blueberry mixture on top of the batter. Spread remaining batter over blueberry mixture. Spread remaining blueberry mixture on top, avoiding edges.
  5. Bake for 40 to 45 minutes for 8 inch pan (25 to 30 minutes for 9 inch pan) or until golden.
  6. For topping, follow heating instructions on the Duncan Hines® Amazing Glazes Vanilla package. Drizzle over hot coffee cake. Serve warm or room temperature.

You can look up Splenda recipes on their website. And if you want to try something from a mix, Sweet & Low makes cake and frosting mixes. I used them to make cakes, cupcakes and trifles for a relative. I have also used store bought sugar free sponge cakes and dressed them up with fresh fruit and sugar free preserves. Hope that was helpful :)

Anyone have any ideas/thoughts about it being served cold?? I wanna make this for a group party but I would need to make it ahead of time, therefore it would be cold by the time I got the the party...any help would be great!

For those looking for the exact Box as in the picture-- they might have changed it. But the 100% whole grain Streusel mix HAS Wild Maine Blueberries in it too. So it is the same thing. I added the streusel on top and in the middle to for an extra punch. It was delicious!

I made this with the Blueberry Streusel Mufin Mix and poured it into a loaf pan. I didnt have blueberry preserves, but blackberry instead which I used. The problem I found was when it says to "spread" the blueberry mixture. I found that impossible. So I swirled it in. And instead of a glaze, I used the streusel on top. It turned out fine. Very tasty.

I could not find the right mix so I bought the Blueberry Streusal Muffin Mix instead. It worked well I just did not use the Streusal. I also only had 'soy' milk in the house which also worked just fine. It was delicious!

I really wanted to make this but, was unsuccessful in my search for the muffin mix. I tried two different grocery stores and then gave up. : (

I cannot find it here either. The only mix I could find in whole grain was the was the 'Blueberry Streusal muffin mix. I am just going to have to try it with that one. Wish me luck. ;)

Does this whole grain muffin mix even exist ? I have looked in 10 stores and none ! The add in the magazine for this recipe even has a coupon for the streudel mix and the glaze ! ?????

I have found this at Walmart and Kroger. It's kind of hard to find amongst all the other mixes and the wild maine blueberries is in a small area on the box so.... good luck!

P.S. if you buy perserves with whole blueberries in them, it comes out great, (which is what I think the recipe means and is called for!)

There are blueberries in the box that comes with the mix.

The box of muffin mix comes with blueberries. In the recipe instructions, it tells you to mix the blueberries with the preserves.

My husband & I love this cake, I've made it several times for us as well as for others. It's a BIG hit where ever i take it. I do make my own glaze for the top. Powdered sugar, milk & butter.
