Recipe Description
Take a break from the ordinary with our Blueberry Coffee Cake. Slowly sink your teeth into this taste sensation and you'll find yourself in a berry wonderland created by Duncan Hines Simple Mornings Wild Maine Blueberry Muffin Mix.

Ingredients Baking Instructions

Coffee Cake:

Crumb Topping:

  • 1/2 cup chopped pecans
  • 1/2 cup firmly packed brown sugar
  • 2 tbsp Crisco® Butter Flavored Shortening Sticks
  • 1 tbsp all-purpose flour
  1. Preheat oven to 350°F. Grease 8-inch square pan.
  2. Rinse blueberries from mix with cold water and drain.
  3. For coffee cake, place muffin mix in medium bowl. Break up any lumps. Add egg whites and orange juice. Stir until moistened, about 50 strokes. Fold in blueberries. Spread in pan. Top with strawberry preserves.
  4. For crumb topping, combine pecans, brown sugar, butter and flour. Stir until mixture is crumbly. Sprinkle evenly on batter.
  5. Bake at 350°F for 40 to 45 minutes or until toothpick inserted into center comes out clean. Serve warm or cool completely.

I used to make a coffee cake using recipe off side of Duncan Hines cake mix and blueberry pie filling anybody have this recipe??

I saw the neatest blueberry cake last night surfing. It was Blueberry Crumb Cake similar to DH Apple Cinnamon Whole Grain Coffee Cake, baked in a 9-inch square pan. She must have used canned blueberries or possibly frozen and got a lot of juice. So she cut the cake into serving size squares and poured the prettiest color of blueberry syrup she made with the juice over them and let it drip down in little pools on the plate, made something ordinary extraordinary. Now this mix I think has been around awhile, think it has a little can of blueberries in it. It looks good though.

We have a few people allergic to strawberries, so I used raspberries instead... the raves continue...
