Finally got it made. Love the granola topping. I tried not to take too many liberties with the recipe but added about 1 teaspoon nutmeg. I peeled and cut up 2 think they were Fuji apples, tossed them with a little cornstarch and raw sugar because I like sweet. Well, it took forever to bake. Finally I took it out and the apples were still a little crisp. Then I noticed the center was not completely done after I had eaten two pieces. So I put it back in the oven. All together it took about an hour with the temp probably 325 because my oven sometimes cooks hot.
So unless your 2 apples are a very quick cooking kind, I suggest you cook them in a saucepan with a tiny bit of water and sugar. Then you could probably omit the cornstarch but I'd stir a little into cold water and into the apples, let them cool, then add them to the mix.
I had it both with whipped cream and without. Good either way. Can just slice off a piece and eat it with your fingers. It did have that whole grain taste, I think that's what it was, that I'm not too used to in most baking but would make it again. When mixing it was very thick. i added a little more water, it was still thick. Part of the problem was I threw a handful of frozen blueberries in. By the time I got done, they were way overcooked. So that wasn't such a good idea. Better luck next time.

Just made this coffee cake yesterday afternoon. After cooling I put it in the refrigerator over night. Just had a piece for desert. Wonderful and moist. Baked for 14 min., then 6 min. then 5 &5 min. Total 30 min. but it turned out great.

That looks yummy, will pick that up next trip to the store, double batch of that and ice cream. I love real whipping cream, too. pja, I don't know but I call around the main stores if I'm not sure they stock what I want. amazon has must be every kind they make, kind of pricey though, but might be worth it. I do a lot of improvising, would probably use slightly diluted frozen oj in place of the water and some grated peel in a yellow cake mix.

This is extremely delicious and healthy-tasting - wonderful texture! If you are not an experienced baker, please note the following: (1) it is impossible to "pour batter" because this is almost dough, which must be spooned into baking pan - don't worry that you goofed somewhere; (2) impossible to "follow cooking time provided" because the box only gives baking instructions for muffins - baked 14 minutes, then 7-minute intervals (checking doneness each time) - easy to do with a toothpick in center of cake. If you like oatmeal, real flapjacks, and whole-grain bread, you will love this!

This recipe was a bit heavy for us but if it is served warm with a whipped topping or ice cream it is good. Better as a dessert rather than a coffee cake in the morning.
