delicious orange supreme cake mix with cranberries. I adapted this from Duncan Hines CakeMix Magic cookbook. Originally, it was lemon blueberry, but you work with what you have!
- 1 box Orange Supreme Cake Mix
- 1/4 cup flour
- 1 tsp baking powder
- 3 eggs
- 2/3 cup milk
- 1/3 cup oil
- 1 1/2 cups cranberries (if frozen, thaw and pat dry)
- Preheat oven to 375. Grease or put paper liners in your muffin pans.
- Mix the dry ingredients together. In another bowl, wisk the eggs, milk, oil. Pour into the dry mixture and blend until it is moistened. Don't over blend, leave some small clumps.
- Fold in cranberries.
- Fill muffin pan 1/2 full. Place in the oven 17 to 23 minutes, checking at 17 minutes to see if it springs back when touched.
- Cool on wire racks.
- You can add a glaze if you wish, but these were good alone as well.
- IF you want to do a loaf, put into two 8x2 greased loaf pans and bake for 30 to 35 minutes.

Yes, any dried berry will work, just soak for awhile - orange juice would add a nice flavor. If you can find an orange cake mix, a yellow mix will work and you can just add a teaspoon of orange extract.

I can't find DH orange cake mix in my area so I used lemon cake mix insead with a light glaze and the muffins turned out great

ummm..... maybe if you re-hydrate them with some orange juice then drain? not sure, I never tried it with dried...... maybe experiment!

Yes~ re-hydrate the dried cranberries! They will be great! Or use the dried cherries.
