Mini Muffins. Yummy and Gooey!
- 1 box Duncan Hines Orange Supreme Cake Mix
- 1 box vanilla pudding mix
- 3/4 C. vegetable oil
- 3/4 C. Water
- 5 Eggs
Glaze:
- 3/4 C. Orange Juice (Sunny D is BETTER)
- 2 tbl spoons HOT water
- 2 tbl spoons melted butter/marg.
- 2 1/4 C. powder sugar
- Preheat oven to 375*
- Combine cake mix, pudding mix, oil, and water in a large bowl.
- Add eggs--one at a time.
- Beat for about 2 mins.
- Fill your mini muffin pan 1/2 full in each.
- Bake at 375* for 10-15 mins (depending on your oven. Mine took 11 mins)
- Glaze: Mix OJ, butter/marg., water in a medium bowl.
- Stir in powder sugar.
- Dip each muffin in glaze IMMEDIATLY after you take them out of the oven...They need to be nice and warm.
- Place on a cooling rack or cookie sheet to cool.
- Let stand about 30 mins.
- They will be a little soggy hince "melt-aways".
- Also, be sure to stir your glaze before you dip a new batch...sugar will settle.
