Rainbow Cupcakes with Cotton Candy Frosting

Delightfully bright and vivid rainbow cupcake with sweet cotton candy frosting.

Ingredients

  • 1 packet of Duncan Hines® Frosting Creations™ Cotton Candy Flavor Mix
  • 1 can of Frosting Creations™ Frosting Starter
  • 1 box Duncan Hines white cake mix
  • Food coloring (blue, red, green and yellow)
  • paper cupcake liners

Baking Instructions

  1. Pour pack of Duncan Hines® Frosting Creations™ Cotton Candy Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
  2. Mix cake mix according to directions. Evenly divide batter into 4 separate bowls. Add food coloring separately to make a color of each bowl (blue, red, green and yellow) Make them vibrant!
  3. Spoon a little of each color in fourths in each cupcake liner.
  4. Bake according to box.
  5. Remove from oven and cool.
  6. Frost with cotton candy frosting.
  7. Sprinkle with colored sugar decors.

Mayonnaise as a replacement for oil and eggs in a cake mix

You can substitute the oil and eggs called for in a cake mix by following the directions below: Omit eggs and oil and use ONLY the same amount of Mayonnaise as oil called for in the cake mix directions. You may need to adjust the amount of water. Start by addiing a small amount of water and add more as needed to achieve a cake batter consistency, but do NOT exceed the amount called for in the directions.

To reheat leftover muffins, wrap muffins tightly in foil. Place them in a 400ºF (200ºC) oven for 10 to 15 minutes.
