I love making cupcakes and I LOVE pineapple upside down cakes, so I decided to experiment and the results were DELICIOUS!
- 1 - Duncan Hines Pineapple Supreme Cake mix
- Oil and Eggs called for on box
- Pineapple juice in place of water called for on box.
- (you don't have to use pineapple juice - I just think it enhances the flavor!)
- 1 - Can of pineapple tidbits (save the juice!)
- 1 1/2 Cups of light brown sugar
- 1 Stick of melted butter
- Maraschino Cherries
- Mix the cake as directed on box.
- Subsitute the pineapple juice from the canned pineapples in place of water. (Optional)
- Melt the butter.
- Spray cupcake pan with cooking spray. (Do not use paper liners!)
- Place one teaspoon of melted butter in the bottom of each cup of the pan.
- Add one tablespoon of brown sugar on top of the melted butter.
- Place one cherry in the center.
- Scatter the tidbits around the cherry to form a circle. (I broke each tidbit into two pieces, because it fit better).
- Add cake mix on top of the pineapple.
- Bake for 18-20 minutes or until cupcakes are cooked.
- Let the pan cool on a cooling rack for about 5 minutes.
- Run a knife along the inside edge.
- Invert cupcake pan on the cooling rack.
- Some of the brown sugar and pineapple might stay behind in the pan, just scrap it out and lay it on top of the cupcakes.

I made these & took them to my Dr.’s office & the girls in there ate them all & now I make them every other month. I was afraid to take them since it was the 1st time I had ever made them... I love them too... I have never tried them with the bourbon so I might have to try that.

Made these tonight with great success! I melted the butter and brown sugar in a skillet, added my well drained pineapple and 1/4 cup bourbon and brown to a simmer. Spooned my topping over the cherry in the tins and covered with the mixed batter. So easy and I got rave reviews! Thanks for the great recipe!

you can use any size can if there are leftover pineapple just use it for next time.

ABSOLUTE MUST! This is a super easy recipe and they turned out beautiful and decadent. Make sure you spray your cupcake/muffin tin w/cooking spray as they will pop out easier. My family and coworkers said this is by far the best recipe for pineapple upside down cake because of them being in good portion, :)

I just wanted to share that I made these, they were so pretty, I doctored up the yellow mix like I do and when they're covered for over a day, they aren't as nice. I had packed them all up for my son to come get them and it was delayed by a day. So. I only have one pan, made 2 dozen then had enough left for 8-in square. Used crushed pineapple well drained. Would definitely do again. Also cut huge gorgeous cherries in half. I did have a sticky sticking problem. Am using more butter next time.

My son texted me and said he wanted PUC. Hmmmm. Had to think a couple minutes. Pineapple upsidedown cakes, think I had mentioned how cute these were. So I'm going to try these and normally stick to the plain mixes but will pick up the pineapple if they have it. And some cherries. And an extra can of crushed pineapple. So what's not to like about the cherry? He never liked them. Well, he can just pick them off then. I always liked to stick cherries in my PUC's. My fav is AUC with cherries though.

i made these for my girl and i got the omg they are good tricks to get a great cupcake use crushed pineapple and spray the whole miffin tin with pam as they pop right out if you have to loosen them use a plastic knife from mcdonalds as it wont scratch your coating on your muffin tin just trying to be helpful great recipe worked like a champ thanks

i used regular muffin tins ( cupcake pans ) and they turned out perfect i have 2 12 muffins to a pan so my theory is go big or go home its works for me

Hi LinRan, no I did not use Jumbo muffin tins. Just the standard size. I think it's just the angle the picture was taken that make them look bigger.

Was going to make these until I realized I have Pineapple tidbits in heavy syrup and not in juice....ugh!! Hopefully i'll get to make these soon!!

I can't always find Pineapple cake mix, so I use the Delux Butter. I also use the Pineapple Juice, but I like to use 1/3C Juice, 1/3C Malibu Rum instead of water. Tried the cupcake variation today vs skillet. They turned out great!

I made these for a bat mitzvah today and they were fantastic. I used a stick of butter in the cake instead of oil and used the pineapple juice. I used crushed pineapple, but it seemed a little mushy to me -- cooked up beautifully, but next time I will use tidbits and chop them in the Cuisinart a few times instead. I also mixed the melted butter and brown sugar before putting them in the bottom of the muffin pans, and I used dark brown sugar. Incredibly good! Points off, I guess, for using a rival brand of yellow cake mix...but it was what I had on hand.

OK, I confess I have used other flavors, as well as pineapple supreme, to make mine. I used the strawberry and lemon (still added the pineapple juice in place of the water) and got amazing results. The strawberry had a cute slightly pink color and the lemon had a brighter flavor.
