These are my favorite cupcakes to make. They are so moist and I've done many combinations.

I don't usually rate recipes, however, to all those that wrote previously, I also mistakingly made 2 batches of these cupcakes today & both sunk during cooling (and I'm an experienced baker-shame on me!) I'm not sure what possessed me to try this recipe over scratch other than trying to cut corners & use up "spare" boxes of mix (+ 3 small puddings)...Never again. The excess pudding gave the sunken-mishaps an artificial taste + the amount of pudding used can only give a rubbery, too-dense & under-baked texture even after 30 min of bake time-of course they sunk! Not good, nor fit for a store of any kind...look elsewhere for the World's Best Cupcake recipe.

Ok these are AMAZING!! Used 2 big boxes or 3 small boxes of dry pudding mix--batter is thick its supposed to be and 5 egg whites--got RAVE reviews on these--made them in the banana version (w/banana cake mix and banana pudding)with the cream cheese frostings and sprinkled chopped walnuts on top--people were saying I should open a cupcake store--that good! Also made choc ones with peanut butter frosting--sooooo yummy!

Did either batches of these (I agree, best ever cupcakes) sink in the middle while they were cooling. Mine did as mentioned below but I have no idea why. Too much beating, but I don't think that would be the problem. I used D.H. cream cheese frosting on these cupcakes and it, too, was very good.

I'll have to try the banana one next time and also the chocolate with peanut butter frosting.

What did you use for the banana cake mix? I couldn't find a DH banana cake mix.

The ONLY place I could fine Duncan Hines banana cake mix was Albertsons--I even emailed CS to ask where it was sold and that the ONLY place I think.....sooooo good though!

I just made these today to take to a picnic. I would like to ask "mrousso" if the cupcakes sink a little bit in the middle as they are cooling? I had to bake mine 25 minutes, tested as done, but sank during cooling. I followed recipe exactly and they taste wonderful but when I bake cupcakes they usually don't sink in the middle. Comments from anyone who has made this recipe will be appreciated. I will make this recipe again but try this batter in a Bundt cake instead because this combination of ingredients is fantastic. The 1 1/2 cups of dry pudding mix is NOT an error.

If your cupcakes sank , 1. did you cool them near a draft? 2. even though they tested done you might have needeed to bake then about one minute longer

I make other cakes similar to this with pudding, oil and the other ingredients listed above and they only take 1 regular size box of instant pudding. The 1-1/2 cups of dry pudding has to be an error.

It is DRY pudding mix that you use for the recipe. As for the size of box you need - doesn't matter what size you buy because you need to measure it out. This recipe calls for 1-1/2 cups of DRY INSTANT chocolate pudding (any brand). Hope that clarifies this for some of you. :)

1 1/2 c = 12 ozs.

Purchase 4 boxes of the 3.4 ozs or 2 boxes 5.1 ozs plus 1 box of 3.4 oz

3.4 oz

Measure 3 (3.4ozs boxes + 3 TBS from the remaining box of instant pudding mix)

5.1 oz

2 (5.1 boxes) + 1 (3.4 oz box) which equals Measure 2 (5.1 ozs boxes + 3 TBS from the 3.4 oz box of instant pudding mix) .

I haven't tried thr recipe yet but if you buy two (2) boxes of the JELL-O Instant Pudding and Pie Mix in the 5.1 ounce box thhere should be enough for the recipe. I measured one box and it comes in at a little less than a cup. Hope this helps.

This is an awesome receipe. I plan to make these for my son's wedding. We did a test of several receipes and everyone LOVED these. I used chocolate mix instead of red velvet but they were FAB!

It calls for 1 1/2 c of pudding. Do you put the pudding in dry or already mixed with milk?

I wonder about this, too. How many boxes of instant pudding mix might be a more helpful guideline. I'm guessing that 1 1/2 cups of dry instant pudding mix has to be at least six or more boxes. That could get a little pricey. Anybody else have a clue as to how many boxes to use?

Three words: mmmm, mmmm, mmmm! The name of these cupcakes could not describe them better. I could eat these for breakfast, lunch and dinner. And the recipe is so easy to follow. Do you have any other unique recipes?

I made a chocolate version of these instead of Red Velvet and they came out AMAZING!!! Very easy to make and a big hit with everyone!
