Lucky Charms Cupcakes

I felt like a kid again when I was fishing through the Lucky Charms box and trying to pick out the marshmallows. These Lucky Charms cupcakes have Lucky Charms cereal in the batter and are topped with vanilla frosting and Lucky Charms. These cupcakes will bring a smile to anyone's face because they are fun, colorful and yummy!

  • 1 packet of Duncan Hines® Frosting Creations™ Bubble Gum Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
  • To Bake:
  • 1 box Duncan Hines French Vanilla Cake Mix or Confetti Cake Mix
  • 1 1/3 Cups Water
  • 1/3 Cup Vegetable Oil
  • 3 Large Eggs
  • 1 1/2 cups Lucky Charms cereal
  • To Decorate:
  • 1 stick butter
  • 1 lb powdered sugar
  • 1/4 cup cream or milk (cream makes the frosting a better consistency)
  • 1 tsp vanilla extract
  • 3 drops McCormick pink food coloring
  • 1/2 cup Lucky Charms cereal
  • This would also be a great recipe to use the Frosting Creations Bubble Gum mix! It's pink and sweet like Lucky Charms!

Baking Instructions

  1. Pour pack of Duncan Hines® Frosting Creations™ Bubble Gum Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
  2. To Bake:
  3. Preheat oven to 350°F. Place cupcake liners in muffin pans.
  4. Prepare cake batter as directed on package.
  5. Pour batter into cupcake liners, filling them no more than two-thirds full.
  6. Bake 18 to 24 minutes or until toothpick inserted into cupcakes comes out clean. Let cool completely.
  7. To Decorate:
  8. Combine butter, milk, vanilla, powdered sugar. First mix on low speed, and then work up to medium to high speed. You want to whip the cream a bit so that the frosting is nice and fluffy.
  9. Add the food coloring until the frosting is the desired light pink color. You may substitute another color if you wish. For instance, these would be great St. Patty's Day cupcakes, so you might want to substitute green.
  10. Using a Wilton 1M tip and frosting bag, frost each cupcake. You may also just frost them with a spreading knife.
  11. Sprinkle the cupcakes with Lucky Charms, and make sure to get some marshmallows because those are everyone's favorites! "They're magically delicious!"
  12. Enjoy! :)

Cutting Brownies

When Brownies have cooled to room temperature, place in freezer for short time. This will allow you for a better more even cut for your squares I also use a pizza cutter which works great.
