Ingredients Baking Instructions
  • Recipe Description: Red decadent cupcakes for all occasions
  • 1 package Red Velvet cake mix
  • 5 eggs
  • 2 tablespoons oil
  • 2 packages (8 ounce each) cream cheese, softened
  • 1/2 cup sugar
  • 1 1/2 cup milk
  • 3 tablespoons red food coloring
  • 1 tablespoon vanilla extract
  • 1 container Cream Cheese Frosting
  1. Preheat oven to 300:

  2. Measure 1 cup dry cake mix; set aside.
  3. CRUST: In a mixing bowl, stir remaining dry cake mix, 1 egg & oil. Press crust mixture into bottom of 24 cupcake pan/decorative liners.
  4. In a bowl, blend cream cheese and sugar; add 4 eggs and reserved cake mix; beat 2 minutes; gradually add milk, red food coloring and vanilla. Pour into cupcake crusts. Bake at 300: for 45-50 minutes, or until center is firm.
  5. Cool. Frost cupcakes and chill 1 hour. Add decorative picks, flowers or candies for any occ

I would like to make this recipe as a layer cake and decorate. It is firm enough to turn out and stack and decorate??

Yes, Divide the crust and batter in half between two round cake pans. I sprayed mine with Non-Stick coating. I suggest you refrigerate before layering; the cream cheese in the cake will harden making it easier to stack and frost. It's amazing.
