Blue One-Eyed Cupcakes

My son wanted a Monsters vs. Aliens birthday party,so I made these cupcakes for him. They were actually very easy to make. The longest part was letting them sit in the freezer, so the icing could harden for the B.O.B to stay together before he was dipped in the blue icing.

Ingredients Baking Instructions
  • 2 Duncan Hines Yellow cake mixes
  • 1 can Duncan Hines chocolate icing
  • 3-4 cans Duncan Hines vanilla icing
  • 1 box Entenmann's Glazed popems (vanilla)
  • red M&M's
  • eggs (according to cake mixes)
  • oil (according to cake mixes)
  1. 1. Mix the 2 yellow cake mix according to the box to make 24 cupcakes & 24 mini cupcakes.
  2. 2. After cupcakes cooled, take the wrappers off the mini cupcakes. Use vanilla icing to put the mini cupcake on top of the big cupcake. the vanilla icing to put the popem on top of the mini cupcake. Then store them in the freezer overnight to make sure they stick together well.
  3. 3. After you take the cupcakes out of the freezer: Take 2 cans of icing and put in a glass microwaveable measuring cup. Microwave 5-10 seconds at a time, stirring between, until the consistency is similar to Elmer's glue. Add a few drops of blue food coloring, and stir it in.
  4. 4. Take cupcake creation, hold it upside down, and dip it in the blue icing only up to the liner. You want it completely covered. Hold it up and let the icing drip off, and then turn it right-side up. Repeat for each cupcake.
  5. 5. Then make B.O.B's face. For his eye, make a white circle with the vanilla icing, and put a red M&M in the middle. Then use chocolate icing to make his mouth and the dot in the middle of his red eye.
