Recipe Description
Orange Almond Cupcakes made with Yellow Cake Mix and frosted in yummy mango-orange cream cheese frosting and a mandarine slice. I made these to keep my mind of Hurricane Irene!

Ingredients Baking Instructions
  • 1 Box Yellow Cake Mix
  • Oil as directed on box
  • Substitute Orange-mango OJ for water
  • Add 2/3 C blanched almond slices
  • 3 large eggs as directed
  • Can or Jar of sliced Mandarine orange segments

Frosting:

  • 1 Stick butter+1Box Cream Cheese+1 Box Powdered Sugar
  • Mango OJ - a few tablespoons
  1. Make cake mix as directed substituting Mango OJ for water and toss in a handful (about 2/3 Cup) of sliced blanched almonds.
  2. Mix Batter thoroughly and pour into Pam-sprayed cupcake papers (in a cupcake pan).
  3. Push a single,small mandarine slice into the batter in each cupcake.
  4. Bake at 350, according to directions, mine took about 20 minutes (on convect =325).
  5. Let cool totally and frost with Cream Cheese/Butter/ Box of Powdered sugar, and enough Mango-OJ to get a stiff frosting.I used a bag with a big star tip.
  6. Top each cupcake with a single mandarine slice.

I used a slice of Mandarine Orange to flavor the batter. Using Orange Supreme Cake Mix would be fabulous. I even toyed with adding a few drops of Mandarine Napoleon Liqueur to the frosting! We love Orange flavors.

This sounds so yummy!!! Wonder how it would taste using the Duncan Hines Orange Supreme Cake Mix?
