They might look like dinner, but these Italian-styled treats are all sweet and delicious. The noodles are made from piped frosting and the meatballs are hazelnut chocolate balls topped with strawberry preserves. If you’re looking for a dessert that's unique treat, these might just fit the bill.
- 1 box (9 ounces) Duncan Hines Snack Size Moist Deluxe Classic Yellow Cupcake Mix
- 1 can (16 ounces) Duncan Hines Creamy Home-Style Classic Vanilla Frosting
- 1/2 teaspoon unsweetened cocoa powder
- 3 drops yellow food coloring
- 3/4 cup low sugar strawberry preserves (low sugar has the best color)
- 11 hazelnut chocolates (Ferrero Rocher), unwrapped
- 2 tablespoons grated white chocolate plus additional chunk for garnish
- Preheat the oven to 350°F. Line 12 muffin cups with paper liners in each cup. Prepare the cake mix according to package directions. Divide the batter evenly between the prepared pans. Bake until cupcakes are lightly golden and a toothpick inserted in center comes out clean, 21 to 23 minutes. Transfer the cupcakes to a wire rack and cool completely.
- Tint the vanilla frosting with the cocoa powder and yellow food coloring. Spread a thin layer of tinted frosting on top of the cupcakes. Arrange the cupcakes on a serving platter, touching.
- Spoon the remaining tinted frosting into a ziplock bag. Snip a small corner from the bag (1/8 inch). Now have fun piping the frosting all over the cupcakes to make the noodles. Make sure to pile it high and have some of the frosting hang over the edges of the cupcakes.
- Toss the hazelnut chocolates with the strawberry preserves in a medium bowl to coat. Spoon some of the preserves on top of each cupcake. Place a hazelnut chocolate on top of each cupcake, and one on the platter. Top cupcakes with the remaining strawberry preserves.
- Sprinkle the grated white chocolate over the cupcakes.

Replace the food coloring and cocoa powder with 6T of Peanut Butter to the frosting. Replace the chocolate candy with a chocolate donut hole. Ta-Da ☺ you now have peanut butter and jelly spaghetti cupcakes.

If it makes 12 cupcakes why do you only need 11 candies? Does someone not get a "meatball"?

It is originally taken from the Hello Cupcake cookbook and in that version, the recipe has you put a stray meatball on the side to look like it fell off the plate. The photo here though cuts it off! By the way, that is a really awesome cookbook that I recommend!

Kids and grownups love these cupcakes, I have made them twice so far and found that using Duncan Hines Buttercream frosting is much easier than coloring the vanilla frosting and looks more like real spaghetti.

I made these for my baby shower. We held the event at a local Italian place and they fit the decor perfect. This was in Feb of 09. Everyone loved the look. I used Coco Puffs for the meatballs, and red glitter gel for the sauce. I uploaded a picture.

I made these for an Elf-themed Christmas party and they were a hit! I couldn't find low sugar preserves, so I used regular. The color was fine and looked great! But, it was super sweet. Such a great idea!

Tip: don't add too much cocoa powder, my friend and I made this mistake and the frosting didn't look right. We just joked that it was wheat pasta! But this is still a great idea!!

I am going to make these delicious & real-looking Spaghetti & Meatballs Cupcakes and take them over to our friend's house for a get together! I am sure they will be a HUGE hit!
