Need fun cupcakes for a birthday party but short on time? Birthday Confetti Cupcakes are an easy way to bring a smile to any celebration. We love how these look and taste with Strawberry Cream frosting, but go ahead and experiment with other flavors.
- 1 box of Duncan Hines Confetti Cupcake mix
- 1 1/4 cups of water
- 1 tablespoon vegetable oil
- 3 large eggs
- 1 tub of Duncan Hines Strawberry Cream Frosting
- Preheat oven to 350°F for metal pans.
- Place cupcake liners in two 12-cup cupcake pans.
- Blend dry mix, water, oil and eggs in a large bowl at low speed until moistened (about 30 seconds).
- Beat at medium speed for 2 minutes. Pour batter into cups, filling each 1/2 full.
- Bake 21-24 minutes. Cupcakes are done when toothpick inserted in center comes out clean.
- Cool in pan for 15 minutes. Be careful to let cool completely before frosting.
- Eat and enjoy!

I absolutly LOVE these! confetti cake w/ strawberry icing is my favorite so when I saw the cupcakes I was delighted. they are quick, easy, and delicious. Everytime I have made them the cupcakes have turned out nice and moist. (tip: be bold about the icing)
