Need fun cupcakes for a birthday party but short on time? Birthday Confetti Cupcakes are an easy way to bring a smile to any celebration. We love how these look and taste with Strawberry Cream frosting, but go ahead and experiment with other flavors.

Ingredients Baking Instructions
  1. Preheat oven to 350°F for metal pans.
  2. Place cupcake liners in two 12-cup cupcake pans.
  3. Blend dry mix, water, oil and eggs in a large bowl at low speed until moistened (about 30 seconds).
  4. Beat at medium speed for 2 minutes. Pour batter into cups, filling each 1/2 full.
  5. Bake 21-24 minutes. Cupcakes are done when toothpick inserted in center comes out clean.
  6. Cool in pan for 15 minutes. Be careful to let cool completely before frosting.
  7. Eat and enjoy!

If I use 2 mixes, should I only use 3 eggs or 4 - each box says 2, but it's the same volume as a cake mix if doubled and they only use 3!

These cupcakes are really simple and they turned out great. I made them just like the picture with the strawberry frosting. The frosting that comes packaged is ok but I think it could be better.

I have made these before for a kids birthday. They went over very well, kids love the different colors in the cake and it tastes great.

I really love this cake mix! I made mine with 3 egg whites, the cupcakes were light and fluffy, frosted them with vanilla Duncan Hines frosting.I tinted the frosting pink, rolled edges with pink sugar crystals and topped with strawberries:)

I absolutly LOVE these! confetti cake w/ strawberry icing is my favorite so when I saw the cupcakes I was delighted. they are quick, easy, and delicious. Everytime I have made them the cupcakes have turned out nice and moist. (tip: be bold about the icing)
