Can you make the red velvet cupcakes and put cherry pie filling in the center.
Comment by: MMinNYC (no discussions) on Feb 24, 2012 at 01:42 PM
I did it over the summer - corked a hole in the center of the cupcake after they have cooled, spooned in a tsp of the filling, frosted and then chilled it and it was really good. Friends where pleasantly surprised when they bit into it.

Do you think I could use cherry pie filling in the center instead of the cream cheese filling in the cupcakes?

Love this recipe!! These are wonderful! I did not put the coconut in either and made a homemade cream cheese frosting from a recipe also on this website.

Please confirm: does the creamcheese, choc chips & coconut get baked as well? That doesn't seem right to me..
Comment by: khalverson5 (1 discussion) on Jan 14, 2012 at 02:02 PM
Yes the cream cheese mixture is dropped right into the center of the batter for each cupcake and then baked. They are wonderful!

So is the mini chocolate chips, cream cheese, powder sugar and egg get mixed all together, then once you pour the red velvet mix it goes on top to bake?
Comment by: amyn1979 (1 discussion) on Dec 4, 2011 at 07:08 PM
My question is the same, pls respond..
Comment by: khalverson5 (1 discussion) on Jan 14, 2012 at 02:08 PM
Yes that is correct. Once they bake, the cream cheese mixture will be in the center of the cupcake and you will not see it.

I made these cupcakes for a work event and everyone loved them! I skipped the coconut and made a homemade cream cheese frosting. They are so simple, but taste like they took tons of effort.

Will the cream cheese rise to the top? shouldnt the batter go on top of the cream cheese?
Comment by: spmissy (1 discussion) on Nov 11, 2011 at 08:37 AM
I added the cream cheese mixture to the top of the batter and it sunk to the bottom while baking. It left the tops perfect for frosting.

I noticed you can exchange unsalted butter for the oil. Is the amount of butter to be used the same as the amount of oil? Also, it stated the butter should be room temp. Can you melt the butter or must it be just "soft?"

These are the best. Reminds me of black bottom cupcakes. What a super idea for valentines day. Instead of coconut and chocolate chips on top, use cinnamon hearts or gumi bears on the frosting of just serve them with a dollop of whip cream. They are scrumdeli-ishious.

I made jumbo cupcakes and spooned the cream cheese mixture into the batter and had too much left over. Can I save it in the fridge for the next batch? How long does it keep before it spoils?

Are you supposed to drop a tablespoon of the cream cheese/ coconut /chocolate chip mixture on top of the batter or give it a little mix to incorporate it?

These cupcakes are SOO easy to make and absolutely deliciious! I brought about two dozen to work and everyone loved them! They really end up tasting like they came from a gourmet bakery. I left out the coconut just as a personal preference and they are just delicious either way!
