Tips

Baking cakes for troops

Baking cakes for troops

I would bake cakes for my nephew in Irag this way: Pour batter into canning jars 2/3 full. Bake as directed, EXCEPT put jars in a water bath. Prior to baking in oven, put top and screw on top loosly. When finished, remove the jars (they will be hot), and screw down completly. It forms its own vacuum. His buddies loved my packages. I did not frost the cakes. I also sent 'canned' NE clam chowder.

I substitute almonds for the pecans in the cinnamon/brown sugar filling and add almond flavoring to the batter. Nice change of pace.
