Candy Shop Cupcakes

Carol Rich Recipe shared by:

This cupcake takes me back to all the times me and my cousins would run to the corner store to get some goodies. It’s a great idea for the little ones in your life too. This is a sweet low fat white cake with bubblegum frosting & candy. Not only do they have sour patch kids, bubblegum balls & jelly beans on top, but they also have a surprise inside...NICE!

  • Hands-On Time:
  • Total Time:
  • Servings: 24 Cupcakes
  • Rating:

  • 1 packet of Duncan Hines® Frosting Creations™ Bubble Gum Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
  • 1 white cake mix
  • 3/4 cup egg substitute
  • 1/2 cup chunky applesauce
  • 1 cup of fat free half & half
  • 1 envelope of Kraft Dream Whip
  • Bubblegum balls, sour patch kids & jelly beans

Baking Instructions

  1. Pour pack of Duncan Hines® Frosting Creations™ Bubble Gum Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
  2. Line 2-12 count cupcake tins with your choice of cupcake baking cups.
  3. Preheat oven at 350 degrees.
  4. Stir together eggs, applesauce, half & half, cake mix & dream whip until well moistened. Now beat on medium for 2 minutes.
  5. Now fill all 24 cupcake tins 3/4 of the way. Bake for about 20 minutes or until toothpick comes out clean from center of a cupcake. Place tins on cooling racks and cool completely.
  6. With a coring tool or a knife, cut out a small amount from the middle of each cupcake. Now fill the small hole with some candy.
  7. Frost your cupcakes with the bubblegum flavor frosting and finally, garnish them with more candy.

adding stronger flavor to some mixes

adding stronger flavor to some mixes

I like fruit flavored cakes, but, I find the flavors a bit on the weak side, so, I have a little trick to enhance it. For the lemon cake mix I use some bottled lemon juice in place of some of the water called for, approximately 1/3 of a cup of the juice then the rest of the liquid as plain water makes a stronger lemon flavor. Also, I like pineapple upside down cakebut again I find the original flavor weak, so I use the juice in one can of sliced pineappe and water to bring the liquid up.

Removing shortening from the measuring cup

Removing shortening from the measuring cup

Break your eggs and put them in your measuring cup, swirl them around and then put the eggs into another bowl before you measure your shortening into the measuring cup. The shortening will slide right out into your mixing bowl and then you can cream it with the sugar without any problem!
