This stylish treat is perfect compliment to any event, any girls night, or bachelorette with a combination of cranberry, vokda, lime, and a splash of citrus all tied into a delicious cupcake dazzled up with pink sugar, lime zest, and a wedge of lime for a highly sophisticated, classy look!
Cupcakes:
- Duncan Hines White cake mix
- 3 egg whites
- 1/3 cup vegetable oil
- 1/2 cup vodka
- 1/2 cup cranberry juice cocktail
- 1/4 cup triple sec
- Pink food coloring
Frosting:
- 1- 8 oz package of cream cheese (softened)
- 2 cups confectioners sugar
- 2 teaspoons fresh squeezed lime juice
- 1 Tablespoon lime zest
- 1- 8 oz container whipped toppping
- Pink Food coloring
Garnish:
- 1 Tablespoon lime zest
- Pink Sugar
- Lime cut into 24 small wedges
- Set oven to 350 degrees. Line muffin tins with paper liners to make 24 cupcakes. Blend cake mix, cranberry juice, vodka, triple sec, egg whites, oil, and enough pink food coloring to reach desired shade of pink in large bowl until moistened, about 30 seconds. Beat with mixer on medium speed for 2 minutes or whisk by hand for two minutes. Distribute batter evenly among 24 lined cupcake tins. Bake for 15-20 minutes or when toothpick inserted in center comes out clean. Cool cupcakes completely.
Frosting:
- Beat softened cream cheese,lime juice, and 1 Tablespoon of the lime zest until well incorporated. Add confectioners sugar and beat well, being sure to scrape sides so all ingredients are incorporated. Add food coloring to reach desired pink color (*color will lighten once you incorporate whipped topping), FOLD in whipped topping- DO NOT BEAT IN! Pipe frosting on cooled cupakes. Sprinkle with 1 tablesppon lime zest and pink sugar. Top each cupcake with a small lime wedge.

made these for my parents fish fry buddies, everyone loved them!! The least number people ate were 2, most ate 3 or even 4

These are wonderful. I couldn't stop eating the frosting off the spoon. So light and refreshing - a great summer cupcake.

I had gotten ditracted while making the icicing and instead of folding in the whipped topping I beat it. Why is it important to fold and not beat? help

The cupcakes tasted great but think I will use real egg whites next time (used meringue powder) because the cake was a little to "thick" The frosting was AWESOME! The combination was even better
