Melting Snowmen Cupcakes

Winter time delights!! Melting Marshmallow Snowmen cupcakes as easy to decorate as they are to bake.

Ingredients

  • Duncan Hines Devil's Food Cake Mix
  • 3 Large Eggs
  • 1 1/3 Cups Water
  • 1/3 Cup Vegetable Oil
  • Jumbo Cupcake/Muffin Pan
  • 12 Jumbo Cupcake Liners
  • 12 Marshmallows
  • 1 Large bowl to mix frosting
  • 3 Small bowls to mix colors for decorating
  • 4 Cups Confectioners Sugar plus 1 teaspoon
  • 1/2 Cup Butter
  • 1/2 Cup Crisco Shortening
  • 2 Tablespoons Milk
  • Food color: orange/black/green (or color of your choice)
  • 3 Decorator Bags, 3 couplers, and 3 #4 tips (SUGGESTION: start with the black and do all of the cupcakes then wash the tip (repeat previous step with each color, save orange for last)

Baking Instructions

  1. Follow the directions on the back of the Duncan Hines Devil's Food Cake Mix box for the cupcakes.
  2. While the cupcakes are baking make the frosting.
  3. In large bowl combine the butter and shortening. Mix on low speed until well blended. Add the 2 Tablespoons of milk. Gradually add the confectioners sugar and mix on low speed until smooth.
  4. Frost cupcakes after they are cooled.
  5. Place a small amount of the remaining frosting in 2 of the small bowls.
  6. Place the rest of the frosting in the 3rd bowl.
  7. Add green color to 1 bowl and mix.
  8. Add orange color in the 2nd bowl then slowly add confectioners sugar mix until it is stiff. (NOTE: the orange has to be stiff for the nose to stand out).
  9. In 3rd bowl (bowl with the most frosting) add black color and mix.
  10. Set 1 marshmallow on each cupcake.
  11. Decorate each cupcake:
  12. the black for the eyes, buttons and stick arms
  13. the green for the bow
  14. the orange for the nose

I have seen several rum cake recipes. Some call for instant pudding and some call for cook and serve. Aside from the two different types of pudding all the remaining ingredients are the same. Does anybody know what the difference is between instant and cook and serve pudding and how it affects the cake?
