Chocolate Covered Strawberry Cupcakes

this is my rendition of chocolate covered strawberries in a cupcake! Featuring fresh strawberries and strawberry wine in the batter, swirled with melted chocolate. Once baked, they were topped with strawberry infused chocolate frosting and topped with a slice of strawberry.

Ingredients

  • 1 box Duncan Hines Butter Recipe Golden cake mix
  • 1 stick of butter
  • 3 eggs
  • 2/3 cup strawberry wine (substitute with a strawberry flavored juice)
  • 10-12 strawberries
  • 2 oz Bakers semi-sweet chocolate
  • 1 can Duncan Hines classic chocolate frosting

Baking Instructions

  1. Prepare cake mix as directed on box except use wine/juice instead of water.
  2. Puree strawberries by hand mashing and add to batter
  3. pour batter into cupcake pans
  4. melt Bakers chocolate in microwave until melted
  5. spoon a dime size of melted chocolate on top of each uncooked cupcake
  6. use a toothpick or other stirrer to swirl chocolate into each cupcake
  7. bake as directed
  8. frost with classic chocolate frosting once cooled
  9. top with a small slice of strawberry for decor
  10. optional: add a little bit of strawberry wine to the frosting for an extra little kick

Fun Cakes

When I make the Sock-It-To-Me cake on the "butter golden" cake box I decorate it according to the occasion. For Christmas I dye the frosting green and put candy canes in the center, for Easter yellow frosting and I tint coconut green and fill center with jelly beans, etc. For birthdays I find out favorite candy or such and decorate as close as I can. People pay me to make them for occasions. It is such an easy cake to make and decorate.

Fudgy Chewy Brownies

To make decadent, chewy brownies, use 2 boxes of mix for one 9x13 pan. Mix together with 1 cup oil, 1/4 cup water, 4 eggs, 1 cup chocolate chips. Put in 9 x 13 pan greased on bottom only. Bake for 47 minutes at 325 (or 300 for dark / nonstick pan). Cool, then cut with a plastic knife. Rave reviews every time!
