Chocolate Covered Strawberry Cupcakes

this is my rendition of chocolate covered strawberries in a cupcake! Featuring fresh strawberries and strawberry wine in the batter, swirled with melted chocolate. Once baked, they were topped with strawberry infused chocolate frosting and topped with a slice of strawberry.

Ingredients

  • 1 box Duncan Hines Butter Recipe Golden cake mix
  • 1 stick of butter
  • 3 eggs
  • 2/3 cup strawberry wine (substitute with a strawberry flavored juice)
  • 10-12 strawberries
  • 2 oz Bakers semi-sweet chocolate
  • 1 can Duncan Hines classic chocolate frosting

Baking Instructions

  1. Prepare cake mix as directed on box except use wine/juice instead of water.
  2. Puree strawberries by hand mashing and add to batter
  3. pour batter into cupcake pans
  4. melt Bakers chocolate in microwave until melted
  5. spoon a dime size of melted chocolate on top of each uncooked cupcake
  6. use a toothpick or other stirrer to swirl chocolate into each cupcake
  7. bake as directed
  8. frost with classic chocolate frosting once cooled
  9. top with a small slice of strawberry for decor
  10. optional: add a little bit of strawberry wine to the frosting for an extra little kick

Old Angel Food Cake Recipe - Help Please

Many years ago I found a wonderful recipe using your Angel Food Cake mix, slicing it into 3 layers, and filling in between them with strawberries and whipped cream. On top was a strawberry glaze. I used the recipe for years and now I cannot find it. It was either on or in the mix box or in a magazine. I am ok with the whipped cream and strawberries but am at a loss for the glaze on top. Can anybody help me? Also, my stores do not carry the Angel Food Cake mixes any longer.
