If you want to add coconut, just put in half of the oats and replace the other half with the coconut.
- 2 c. sugar
- 1/4 c. butter (or 1/2 stick)
- 3 c. quick-cooking oats
- 1/2 c. milk
- 1/3 c. cocoa
- 1 tsp. vanilla
- 1/2 c. peanut butter
- Mix together in a large saucepan sugar, milk, butter and cocoa.
- Heat on high until boiling. Boil exactly 1 minute.
- Remove from heat, and in the same saucepan, add peanut butter, oats, and vanilla.
- Do not let it cool off. Spoon immediately onto wax paper and let cool.

I am drooling over here--can't wait to make this. I'm thinking it's also a good way to get the kids to eat oats without them knowing it, he he he!
