No-Bake Chocolate Macaroon Cookies

Recipe Description
If you want to add coconut, just put in half of the oats and replace the other half with the coconut.

Ingredients Baking Instructions
  • 2 c. sugar
  • 1/4 c. butter (or 1/2 stick)
  • 3 c. quick-cooking oats
  • 1/2 c. milk
  • 1/3 c. cocoa
  • 1 tsp. vanilla
  • 1/2 c. peanut butter
  1. Mix together in a large saucepan sugar, milk, butter and cocoa.
  2. Heat on high until boiling. Boil exactly 1 minute.
  3. Remove from heat, and in the same saucepan, add peanut butter, oats, and vanilla.
  4. Do not let it cool off. Spoon immediately onto wax paper and let cool.
