A crisp, delicious cookie with a 'bite' you can't resist. A co-worker's father made these every year and always sent me some at Christmas, but when she gave me the recipe, it never came out right. Then I found this recipe in a special section of the paper called "Century's Best Recipes" and found that she hadn't listed the powdered sugar.
- 1 cup vegetable oil
- 1 cup butter, softened
- 1 cup powered sugar
- 1 cup granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 4 cup unsifted flour, all-purpose
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 1/2 tsp. salt
- Granulated sugar for rolling
- Beat oil and butter until well-blended.
- Add powdered sugar and granulated sugar. Continue beating.
- Beat in eggs and vanilla.
- Sift flour, soda, cream of tartar, and salt together.
- Add flour mixture gradually and mix well.
- Chill batter at least 2 hours or overnight.
- Roll into 1-inch balls, then rolling in granulated sugar.
- Keep all chilled until ready to put into oven.
- Preheat oven to 375 degrees.
- Place cookie balls on ungreased cookie sheet and flatten with a glass dipped in sugar.
- Cookies should be about 2 inches in diameter.
- Bake for 10-14 minutes, until lightly browned at edges.
- I use my trusty small cookie scoop to save time and flatten with my cold meat fork, one direction only, for extra crispy ridges. <P> Be sure to follow the ingredients list exactly--no substitutions--or the cookies won't be the same.
