Egg free chocolate cookies.
- 3/4 cup margarine
- 1 cup unrefined sugar
- 1 egg equivalent*
- 1 tsp. vanilla extract
- 1 1/4 cups whole wheat pastry flour
- 1/3 cup - 1/2 cup cocoa powder
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. sea salt
- 1 cup chocolate chips
- Pre-heat oven to 350 degrees.
- Mix margarine and sugar until creamy.
- Add egg and vanilla extract.
- In a separate bowl, combine flour, cocoa powder, baking soda and baking powder.
- Add dry mixture to wet mixture and mix until everything is well blended, then add chocolate chips.
- Roll into one inch balls and smash down a little bit and place on ungreased cookie sheet.
- Bake 7-9 minutes or until no longer gooey.
- *For egg substitute, any of the following may be used: 1/4 cup applesauce, 1 whole mashed banana ( be aware that the banana will add that flavor to the cookies) or 1 equivalent powdered egg substitute.
