Sweet Strawberry Sundae Celebration Bars

This is a delicious way to celebrate those special occasions. Chocolate fudge cake brownies are swirled with strawberry flavored cream cheese filling and then topped with light and fluffy strawberry frosting. The final touch of drizzled melted chocolate and colorful rainbow decorations make these bars extra special.

Ingredients

  • 1 packet of Duncan Hines® Frosting Creations™ Strawberry Shortcake Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
  • 1 (19.5 oz.) package Chocolate Fudge Brownie Mix
  • 1/2 cup canola oil
  • 1/4 cup water
  • 2 eggs
  • 1 (8 ounce) package lite cream cheese
  • 1 egg
  • 1/4 cup dark chocolate chips, melted
  • 1 Tablespoon decorating rainbow mix

Baking Instructions

  1. Pour pack of Duncan Hines® Frosting Creations™ Strawberry Shortcake Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
  2. Grease a 13x9-inch pan, line with parchment paper for easier removal. Preheat oven to 350 degrees F.
  3. In a mixing bowl, combine brownie mix, oil, water and eggs; mix until smooth. Spoon evenly into prepared pan.
  4. In a mixing bowl, beat cream cheese until softened; add 1/2 cup prepared Strawberry Frosting, beating well; mix in 1 egg until filling is smooth. Spoon over chocolate layer in pan.
  5. With a knife, swirl strawberry cream cheese lightly into chocolate batter. Bake in preheated 350 degree oven for 28 to 30 minutes or tests done.
  6. Remove from oven. Cool in pan. Loosen edges; remove from pan; discard parchment paper.
  7. Frost with remaining Strawberry Frosting.
  8. Drizzle melted chocolate over frosting; sprinkle with decorating rainbow mix. Place in refrigerator for about 20 minutes or until chocolate is firm. Cut into 24 bars for serving.
  9. Preparation time: 15 minutes Baking time: 28 to 30 minutes

If there is one thing I dislike is a dry cake. I find when the cake comes out of the oven and on to a rack if I cover it with a light weight dish towel until it cools it keeps the moisture in the cake instead of letting it evaporate and making the cake dry. I use this method with every cake I make and they stay nice and moist.

Egg Allergy - Flax seed meal eggs

My son is allergic to eggs and we have found that flax seed meal can be used as a substitute. One egg equals 1 tablespoon flax meal plus 3 tablespoons water. It is best to grind the flax seed right before you plan to use it. Mix the flax seed meal with the water and then refrigerate for 15 minutes to let it set. Then use in the recipe. You can use the ratio to make as many "flax eggs" as you will need.
