Looking for something sweet and refreshing that uses Duncan Hines Lemon Supreme Cake Mix? Try these tangy Lemon Bars. Jazz them up with few of your favorite berries sprinkled on top, such as fresh raspberries or blueberries.

Ingredients Baking Instructions
  1. Preheat oven to 350ºF.
  2. Combine cake mix, 1 egg and shortening in a large mixing bowl. Beat at low speed with electric mixer until crumbs form. Reserve 1 cup. Pat remaining mixture lightly into ungreased 13x9-inch pan.
  3. Bake 15 minutes or until lightly browned.
  4. Combine remaining 2 eggs, granulated sugar, lemon juice, lemon peel, baking powder and salt in medium mixing bowl. Beat at medium speed with electric mixer until light and foamy. Pour over hot crust. Sprinkle with reserved crumb mixture.
  5. Bake 15 minutes or until lightly browned. Sprinkle with confectioners’ sugar. Cool in pan. Cut into bars.

Has anyone ever added coconut to this recipe?

I added 1/3 cup of coconut to the lemon juice, peel mix. It turned out good and still tasted lemony.

This is the best lemon bar recipe ever! I got the original when I was a rep for P&G & sold DH cakemix & we had a cookbook called "Bakeshop in a Book". Whenever I take these to party, I always end up having to send the recipe!

I have made these bars many, many times and get rave reviews every time I do. Everyone says they are delicious and have no idea I make them with a cake mix. Definitely 5-star!!
