Peanut butter and jelly sandwiched between soft chocolate cookies - it's the ultimate after-school snack (for adults and children)!
- 1 box Duncan Hines® Chewy Fudge Brownie Mix
- 1/3 cup vegetable oil
- 2 large eggs
- 1/2 cup peanut butter
- 3 tablespoons powdered sugar
- 8 teaspoons jam or jelly of choice
- Preheat oven to 350°F. Lightly spray baking sheets with nonstick cooking-spray.
- In a large mixing bowl combine brownie mix, oil, and eggs; stir with a fork to combine into a stiff dough. Dough will seem dry, but will completely moisten as you stir. (Knead briefly by hand, in the bowl, if preferred.)
- Working with 1 even tablespoon of dough at a time, roll dough into balls and place on baking sheets 2 inches apart.
- Bake at 350°F for 10 minutes or until edges are set. (Centers may appear slightly under-done.) Do not over bake. Cool on cookie sheet for 2 minutes.
- Transfer to wire racks with a metal spatula and cool completely.
- Combine peanut butter and powdered sugar in a small bowl. Spread 1 heaping teaspoon of peanut butter mixture on the flat bottoms of half of the cookies. Top with 1/2 teaspoon jam or jelly. Top each filled cookie with another cookie, flat side toward the filling. Gently press together.
Variation:
- Use any flavor jam or jelly you like. Almond butter or hazelnut-chocolate spread is also delicious in place of peanut butter.
